Baked cauliflower and turmeric schnitzels - recipe with anti-inflammatory and anti-cancer properties

These cauliflower and turmeric schnitzels or pancakes are ideal as an appetizer or snack. They are easy to prepare and very practical. They can also be taken to work to be served at lunch.

They are very good in taste and healthy. The ingredients used have anti-inflammatory and anti-cancer properties, especially cauliflower (and other cruciferous vegetables such as cabbage and broccoli), turmeric and almond flour.

Cauliflower and Turmeric Schnitzels in the Oven

Baked cauliflower schnitzels & # 8211 recipe

• 1 large cauliflower
• 2 eggs
• 1 cup of almond flour (or wholemeal)
• 2 tablespoons of yogurt
• 1 teaspoon of turmeric
• 1 clove of garlic
• 1 teaspoon of curry
• 1 teaspoon of cumin
• 1 teaspoon of coriander
• ½ teaspoon of salt

Unwrap the cauliflower in small bunches and put them in the food processor / blender. Press until finely chopped. Add eggs, yogurt, flour, garlic, salt and other spices. Mix until you get a homogeneous composition. Transfer the composition to a bowl, cover and refrigerate for 3 hours.

Preheat the oven to 180 degrees Celsius. Remove the bowl from the refrigerator. Wallpaper a stretched tray with baking paper. Put 2 tablespoons of the composition in the palm of your hand and shape it into pancakes. Place each pancake in the pan. Continue like this until you finish composing. Put the tray in the hot oven and let the schnitzels bake for about 30 minutes, or until golden or slightly browned.

These cauliflower schnitzels can be served with a delicious cucumber and yogurt sauce. Cut a small cucumber into thin cubes and place in a bowl. Add 1 clove of freshly crushed garlic. Squeeze the juice from 1 lemon and mix everything at the end with 60 g of natural yogurt.

Almond flour can be found in health food stores, but you can get it yourself at home by grinding almonds through an electric coffee grinder or blender. You can replace it with sunflower seed powder or whole wheat flour or spelled (spelled).

Ingredient:

  • 2 chicken breasts (of 400-500 gr each)
  • 2 large tomatoes or 3 small tomatoes

  • 4-5 eggs

  • Olive or sunflower oil
  • Salt and black pepper

Method of preparation:

  1. Cut the chicken breast in half vertically, then halve it horizontally. Cover the pieces with cling film and beat them a little with a meat hammer.

600g new / small potatoes
2 tablespoons oil
2 eggs
100g flour
300g of baked breadcrumbs
2 teaspoons cayenne pepper
4 pork or veal steaks (300g each)
50g butter
50g lard
1 lemon
Half a bunch of parsley

Preheat the oven to 200 degrees.

Dress the potatoes well in oil, salt and pepper. Put in a pan and bake for 40 minutes. Turn them a few times, until they turn golden everywhere.

Separate the eggs into two large bowls and beat the egg whites until frothy. Use a fork to mix the yolks. Put the flour in another bowl and the breadcrumbs in another bowl, along with the cayenne powder. Season with salt and pepper. Put a cling film on a mincer and place the meat. Cover with another foil and beat the meat until it reaches a thickness of half a centimeter.

Roll each piece of meat in flour, then in the yolk, then in the egg whites and finally in the breadcrumbs.

Add the butter and lard to a large skillet and heat until a froth forms. Add the steaks and fry for 3-4 minutes on each side.

Drain the excess oil and add the schnitzels to the plates. Chop the parsley, add the potatoes and serve with lemon juice.
