Cake with crumbs, honey and bananas

The ingredients you need are:

  • 200 g flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 pinch of salt
  • 1 cinnamon powder
  • 4 tablespoons butter
  • 100 g brown sugar
  • 3 tablespoons honey
  • 2 large eggs
  • 3 very ripe bananas, medium size, mashed
  • 1 vanilla essence

For crumbs you need:

  • 200 g flour
  • 150 g brown sugar
  • 50 g white sugar
  • 1 pinch of salt
  • ¼ cinnamon teaspoon
  • 170 g cold butter

Preheat the oven and line a round cake tin with removable walls. Place baking paper on the bottom of the tray and grease it.

Separately, on a sheet of waxed paper, mix the flour, baking powder, baking soda, salt and cinnamon.

In a large bowl, with a mixer set to medium speed, beat the butter, sugar and honey until you get a light and creamy mixture, about 5 minutes, scraping the edges of the bowl from time to time. Gradually add the eggs, mixing well after each one. At low speed, add half of the flour mixture, then the banana puree and vanilla. Add the rest of the flour mixture and mix until smooth.

Pour the dough into a wallpaper cake and distribute it evenly. Sprinkle the mixture of crumbs over the dough to form a simple topping. Bake for 50-55 minutes or until the toothpick test passes. Let the cake cool on a wire rack for about 10 minutes. Then, using a metal spatula, remove the cake from the pan, removing the walls of the baking tin. Allow to cool well.

The crumbs for cakes are prepared as follows:
In a bowl, mix the flour, brown sugar, salt and cinnamon. Cut the cold butter into small pieces and add it over the dry ingredients. With your hands, grind the butter and knead the pieces until large balls form. Divide the mixture in half and store it in plastic bags, which you put in the fridge. • 500 g of dried apricots

I couldn't just limit myself to an energizing smoothie, so I made three. In three colors. I'm not good at nutrition and all the good ingredients that ingredients have, so I'm not going to become an expert who gives you tips on how to combine the elements. All I know is that these fruits have a lot of vitamins and fiber, which helps, especially at this time of year. Otherwise, it's just a matter of taste.
