Step One: Start with the Eggs

Start with chilled eggs, since they're easier to separate without breaking the yolks. Gently crack the egg, keeping the shell together. Hold a cupped hand over a bowl. With the other, gently separate the shell along the crack, letting the yolk and white drip into your waiting hand. Keeping the solid yolk in your hand, allow the white to fall through your fingers into the bowl below. Fat, which is found in yolks, is the enemy of light, airy, stiffly beaten egg whites. Reserve the yolk in a separate bowl for another use, and throw away the shell.

Step Two: Initial Mixing

Place the egg whites and cream of tartar (added to stabilize the egg whites) in a large, clean bowl; beat with a mixer with clean, dry beaters at medium speed until soft peaks form.

Step Three: Increase Mixing, Add Sugar

Increase the mixer speed to high, and gradually add granulated sugar and then powdered sugar, 1 tablespoon at a time, beating until stiff peaks form. Add vanilla seeds and extract; beat just until blended.

Step Four: Pastry Art

For picture-perfect meringues, spoon the batter into a pastry bag fitted with a large star tip; pipe 60 mounds onto prepared baking sheets.

Step Five: Bake and Finish

You can also scoop the batter with a spoon, using your finger to transfer the batter onto the baking sheets. Bake the meringues slowly at 225° for 1 1/2 hours. Turn the oven off, and leave the meringues in the oven with the door closed for 1 1/2 hours or until the meringues are dry.

Instructions

Drop by rounded measuring teaspoonfuls about 1 inch apart onto 2 large foil-lined baking sheets sprayed with no stick cooking spray.

Bake both sheets of meringues at the same time 45 minutes. Turn oven off. Let meringues stand in oven 1 hour or until completely cooled.


HOW TO MAKE MERINGUE COOKIES?

First, crack the eggs and separate the egg whites. Chilled eggs are easier to separate. Place it in a bowl and let it sit until it reaches room temperature, for about 10 to 15 minutes. Then, place it in a clean bowl with a bit of salt and acid.

Next, whip over medium speed until soft peaks form. Increase speed to high and add sugar gradually. Beat until it reaches stiff peaks but still shiny, and then bake them. Leave the cookies inside the oven until they are totally cooled.

Lighter-than-air meringues seem to be making a comeback in the food world, especially piggybacking off the popularity of the pavlova (which is basically a giant meringue topped with fresh fruit and whipped cream). They are crispy on the outside but soft and tender on the inside, making their sophisticated appearance even more intriguing. Seriously, you can never go wrong by serving meringues, they are an absolute French-dessert classic. If you want your meringues to truly stand out, get a professional-grade piping bag which will help define the intricacies of the meringues' shape and texture.

This recipe takes the meringues into keto territory, by substituting the sugar with a low carb keto-friendly monkfruit-based sugar alternative. Monkfruit-derived sweeteners have zero calories and zero glycemic index, which means they won't spike your sugar levels, while still tasting just as good as regular sugar.


How to Make Meringue Cookies

1. Pour the egg whites into a stand mixer fitted with a whisk attachment. Make sure the mixing bowl and whisk you’re using are dry and very clean–egg whites won’t beat properly if there is fat or yolk residue anywhere.

2. Whip the egg whites until they are foamy–this means that they should be white and bubbly, but not yet starting to hold any sort of peaks.

3. Add the cream of tartar to the foamy egg whites, then mix on low speed until the cream of tartar is mixed in.

4. Whip the egg whites to soft peaks. This means that when you lift the whisk from the whites, the whites form a peak that droops down gently rather than sticking straight up and down. Once you reach this “soft peak” stage, you’re ready to begin adding the sugar!

5. Once at soft peaks, add the sugar a spoonful at a time, while mixing the egg whites at medium-high speed. You don’t have to measure it precisely, but the point is to add it very gradually so it gets slowly incorporated. I wait at least 1-2 minutes between each addition before adding more, to make sure that it really is well-mixed in.

6. Now you can add any flavoring extracts you like! For this recipe, I went with classic vanilla, but any standard extracts will work. Avoid oil-based flavorings, as the oil will cause the egg whites to deflate.

7. Continue to whip the whites until they are very stiff. This means that when you remove the whisk from the meringues, the whites stand up straight and don’t droop down at all–this is called “stiff peaks” stage. The meringue should also not feel gritty or grainy from the sugar.

8. Time for piping! If you want to color the meringue, gently fold in gel food coloring with a spatula and stir just until the color is even. Then place the meringue mixture in a piping bag. You can use a regular round tip for round kiss-shaped meringues, or use a star tip for stars. If you want lots of ridges, a French star tip is what you’re looking for!

9. Pipe the meringues on parchment paper. They won’t spread much, so you can put them fairly close together. I like to make smaller ones (1-1.5 inches) but you can make larger ones if you’d like! You’ll just want to adjust the cooking time and keep a close eye on them in the oven.


10. Once the meringues are baked, turn the oven off and let them cool completely in the oven. Going from hot oven to cold room can sometimes cause your meringues to crack, so gradually lowering their temperature is best for keeping your meringues looking good!


Tips on How to get the perfect vanilla meringue cookies

  • Making – Make sure the bowl you are using is completely dry and grease-free. I’ve found even the tiniest bit of water will not allow your egg whites to reach stiff peaks.
  • Egg Whites – Separate your egg yolks from egg whites in a separate bowl from your mixing bowl. I’ve found that even the tiniest bit of egg yolk will ruin your batter from achieving stiff peaks.
  • Baking – I like to bake mine around 200F for around 2.5 hours. The cookies on the outside would be hard and almost appear dry. You want to be able to lift them easily from the silicone mat/parchment paper and the bottoms stay intact.
  • Texture – Meringues should be hard and dry-like on the outside but inside is almost like a marshmallow. They should have a crunchy outside but a melt-in-your-mouth inside. If they turn out really chewy on the inside next time bake for less time.

How to make Aquafaba Meringue Kisses

Although Aquafaba isn't as protein-rich as Egg Whites, it will basically work the same. Simply put your liquid in a clean, grease-free bowl and use either a hand-mixer or stand-mixer to whip it.

I found that Aquafaba takes longer to whip than Egg Whites so don't worry if it workes very slowly.

You can whip it alone, but ingredients like Cream of Tartar will help to stabilise your aquafaba, just like for egg whites.

For recipes like Aquafaba Meringues, Cream of Tartar is really a must. Not only it will help your liquid to whip faster, it will also make it more stable - and less likely to deflate, or break.

What you will need to make Chickpea Water Meringues

  • The liquid Aquafaba
  • A Hand-Mixer or Stand-Mixer with whipping attachment
  • Optional: Caster Sugar

Because we are making Meringue Cookies here, I used Caster Sugar as a sweetener.

If you were to make whipped aquafaba for another recipe like a Vegan Chocolate Mousse, you wouldn't necessarily need to add sugar to it - the cream of tartar will be enough to stabilise it.

Hi Kristen--I will share mine. I actually spent a lot of time researching recipes because my daughter wanted these cookies for her birthday party. I tried a bunch of different ones and many of the recipes complained that they were very difficult to make. Macaroon shops are apparently a hit in England right now and maybe some bigger U.S. cities and I did see a whole book on how to make them at the World Market. To make them like a bake shop with what they call a "foot" (a spot at the bottom of the cookie where it rises up) might be hard, but to make them without a foot is not hard at all (I actually think they look better without a foot). They are basically a meringue cookie with ground nuts mixed in. However, you probably could use any meringue cookie recipe and put icing in between. You have to make sure you bake them long enough so they are very firm and dry. You can tell if you can pick a cookie up and it is completely dry underneath. I often actually turn the oven off and just let the cookies stay in there (even overnight). Then ice them with a good buttercream or gauche (chocolate and cream melted). Yum--I&aposm going home to make some! Then I&aposll write up a hub!

I love how easy meringue cookies are to make. Currently, my family I loves me o make meringue cookies with frosting in between. They are usually called macroon cookies. They are made just like these but with using ground nuts mixed in. Most people use ground almonds but our favorite is pecans because they have more flavor. Another thing I love about meringue cookies is that you can color them to match a party theme or sports team. I made colored ones for the tailgate party when the University I work for made it into a bowl game this year. they were a big hit!

Congrats on HOTD! I have made plain meringue for cookies. I&aposd like to try some of these variations. I would be afraid that the meringue would "fall" if other ingredients were added, but I&aposll take your word on this.
