Vegetable cream soup


We clean the vegetables and wash them. Cut it into large pieces and put them in a pot to boil. After they have boiled in half, add salt to taste. Let it boil well, then separate the soup from the vegetables. Mix with a vertical blender, until the vegetables become pasta. Add little by little the soup I kept and mix until completely homogenous. Add the oil, bring a few more boils and turn off the heat. At the end, add the finely chopped parsley.

Serve hot or cold, with toasted bread croutons, sour cream, hot peppers .... or not, according to preference.
