I consider puff pastry to be a very versatile ingredient and you can make a lot of dishes out of it, which are much better. This time I chose to do something fast: puff pastry spirals, stuffed with ham and Sofia cheese from Delaco. If you ask me, they taste like mini pizza, slightly crispy due to the puff pastry.
In addition to the ingredients I use, you can use something else:
- vegetables: finely chopped olives, diced bell peppers, red onions, corn, spinach
- other sausages: bacon, dried salami of your choice
- Instead of tomato sauce, you can put pesto verde or pesto rosso
These puff pastry spirals can be a snack to take even in a package or small appetizers to put on the table on various occasions: birthdays, holidays. It lasts in the fridge for a few days, I recommend storing it in a saucepan with a lid.

1 puff pastry dough (400 gr.)
100 gr. Sofia cheese from Delaco
100 gr. ham (optional: pork, chicken, turkey)
2 green onions (optional)
3-4 tablespoons tomato sauce
After thawing the puff pastry, lightly spread it with the rolling pin 2-3 times on all sides.
Grease its surface with 3-4 tablespoons of tomato sauce. Place the ham slices over the tomato sauce and the finely chopped green onion on top.
At the end, sprinkle all over the grated cheese.
Roll the puff pastry carefully, then cut the whole roll into smaller rolls about the thickness of your thumb.
Place the rolls on a tray covered with baking sheet, making sure there is enough space between them, then put the tray in the preheated oven at 180 ° C, for 20-25 minutes, until golden brown.
Remove the tray from the oven, let the spirals in the puff pastry and cheese cool for 5-10 minutes, then serve with pleasure.
You can eat them with a yogurt sauce or a tomato sauce with fresh basil.

- 50g sour cream
- 2 eggs

- From the first package of puff pastry I made the baskets, so I cut with a round glass that I put in 2 forms of muffins (actually mini muffins). To fill them I mixed the cheese with sour cream, a beaten egg, parsley chopped and a pinch of salt. From this mixture I put about a teaspoon and a half in each basket and on top I put thinly sliced sausages in the second round of olives (you can choose various ingredients depending on the tastes of each).
- I divided the second package in half, one part of which I cut into strips that I greased with egg and sprinkled with poppy seeds and sesame seeds. The other I cut into squares, I greased with tomato juice, I sprinkled oregano and in the middle I put a cube of mozzarella. Bake in the preheated oven for about 15-20 minutes at 180 & # 8217C.

Quiche with leeks
Quiche is a kind of savory tart, a star in French cuisine. It has a crumbly and crunchy dough, and the filling is made from vegetables, meat, cheese and eggs. What I like about quiche is that you can play with composition. If you don't eat meat, you can only make it with vegetables. And the combinations are countless (mushrooms, spinach and even tomatoes). Regardless of the option you choose, quiche is a hearty meal and you can enjoy it both for breakfast and for lunch or dinner. I like to cook it on weekends, when I have more free time, and enjoy it with lettuce and a vinaigrette dressing next to it. Today I'm going to introduce you to my favorite quiche recipe. It is a quiche with leeks, spinach and bacon, absolutely delicious! I don't cook much with leeks, but this quiche is a pretty good "excuse"!
The ingredients are simple and don't require much shopping. For the dough you need 100 grams of unsalted butter, 200 grams of flour and 5-6 tablespoons of cold water. Put the flour and butter, cut into pieces, in a bowl. With your hands, crush the butter and mix it with the flour until you get small crumbs. Add cold water and mix with a spoon. After the water has incorporated, use your hands and form a ball of dough, wrap it in foil and put it in the fridge for 30 minutes.
While the dough is cold, start filling. You need 5-6 slices of bacon, 2 cloves of garlic, 1 large or 2 smaller leeks, a few sprigs of dried thyme, 100 grams of baby spinach, 45 grams of cheddar cheese, 3 eggs, 3 tablespoons sour cream , salt and pepper. Be careful with spinach! If you can't find baby spinach, you can also use frozen spinach, but drain it very well after thawing. Otherwise it will leave all the water in the composition of the quiche and make it soft.
Cut the leek - use only the white part of it, without the green leaves. Cut the bacon into slices and chop the garlic. Put the bacon, garlic and dried thyme in a pan with a little olive oil. After the bacon starts to leave fat and the garlic turns golden, add the leeks over, lower the heat a little, and cover with a lid. This composition should be cooked for about 20 minutes, until the leeks soften well. Stir occasionally.
Meanwhile, spread the dough (it should be about ½ inches thick) on a surface lined with flour. Grease the tart pan with a little butter and place the dough on it, taking care to place it well on the edges of the tray to take a beautiful shape. Prick it with a fork and bake it for 20 minutes, until it turns slightly golden. If it swells during baking, prick it with the fork from place to place. Take it out of the oven when it's ready.
Now, let's get back to the stuffing. After the leeks have softened, add the spinach and keep everything on the fire for a few more minutes. Take the pan off the heat, pour the composition into a bowl and grate the cheddar cheese, add the eggs and cream. Season with a pinch of salt and a little pepper and mix well. Put this composition over the dough and put the quiche in the oven for another 15 minutes.

As such, now I have decided to take revenge for the hard times I once lived. I planted this recipe, which I eat weekly, without any side effects on my figure. Maybe because I don't overdo it anymore and, although I eat it in the evening, I still refrain from combining it with a pork chop seasoned and then with a chocolate cake. As I eat bread anyway as before, my body has become accustomed to assimilating carbohydrates properly, it seems.
-1 packet of frozen puff pastry dough
-1 small jar of canned mushrooms
-2 tablespoons homemade ketchup
-salt, pepper, paprika and oregano to taste
The puff pastry is allowed to thaw at room temperature and loosens slightly so as not to break.

This time I made some puff pastry packages with telemea and green onions, which remind me a lot of fornetti. Do you still know them? 1 puff pastry dough (400 gr.)
170 gr. salty telemea
2 sprigs of green onion
sesame and poppy seed mix, 2 tbsp (can be optional, you can just put one of your choice or replace it with seed mix)
* If the telemea is too salty, put the amount of telemea in the recipe in water for 1-2 hours to desalinate, changing the water 2-3 times.
* If you use unsalted telemea then add a little salt in the composition with which you will fill the packages
Let the puff pastry thaw for about 2 hours, until you can open it, without breaking.
After it has thawed, unfold it, then spread it with the twister on all sides to enlarge it a little. I reached the size of 36 & # 21534 cm. After I stretched it, I measured and cut it in length into four parts, and in width into 3 parts (picture 1). They didn't necessarily come out equal, but that doesn't matter.
In a bowl, add the crushed telemeau by hand, the finely chopped green onion rings and the egg. Mix with a fork.
