It always seemed like oatmeal cookies were the last picked, and we don’t know why. Maybe it’s the stiff oats or those pesky raisins, but either way we know these Keto Oatmeal Cookies are going to be the best version of an oatmeal cookie you’ll ever eat! They’re grain free, gluten free, AND sugar free oatmeal cookies.
- 3 eggs, beaten
- 1 cup raisins
- 1 teaspoon vanilla extract
- 1 cup butter, softened
- 1 cup brown sugar
- 1 cup white sugar
- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 teaspoons baking soda
- 2 cups rolled oats
- ¾ cup chopped pecans
In a small bowl, combine the eggs, raisins, and vanilla. Cover and chill for 1 hour.
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the butter, brown sugar, and white sugar. In a separate bowl, combine the flour, salt, cinnamon and baking soda add to the creamed mixture and stir until all of the dry ingredients are absorbed. Next, stir in the egg and raisin mixture, then stir in the rolled oats and pecans. Dough will be stiff. Drop by teaspoonfuls onto an unprepared cookie sheet.
Bake for 10 to 12 minutes in the preheated oven, until the edges are golden. Allow cookies to cool 5 minutes on the baking sheet before removing to a wire rack to cool completely.

You guys, it’s ready! I have been working on this recipe for two years, and I am so thrilled to finally share the perfected version with you! I really LOVE my original oatmeal chocolate chip cookie recipe, and I would eat those cookies every day if I could. The problem with that is that they’re loaded with sugar, so they need to be consumed sparingly. I set out to create healthy oatmeal cookies, and I made several batches that were pretty bad.
Finally, I discovered a PERFECT zero-calorie sweetener to complete my healthy oatmeal cookies. Lakanto Monkfruit Sweetener is so good, and I’m so happy with it! Monk fruit extract is a natural sweetener that is 200 times sweeter than sugar. It bakes so much like sugar, so it’s truly the best sugar substitute I’ve ever used. Brown Sugar Oatmeal Cookies
In the bowl of an electric mixer (or using a hand mixer) beat together the butter and brown sugar until fluffy. Beat in vanilla. Add eggs, one at a time, scraping the bowl after each one.
Mix together the flour, salt, and baking soda in a medium sized bowl. Add it into the creamed mixture in 2 to 3 batches, mixing it until just combined. Mix in the oats until just combined.
Use your preferred size cookie scoop (or a regular spoon) to drop portions of dough onto a lightly greased cookie sheet, spacing them a couple inches apart. Bake for 12-13 minutes or until dark and chewy. If you'd like a crispier cookie, just cook a little longer!
