RECIPE PREPARATION Jumping pallets:

Ingredients for the pallets: 200 g butter, 150 g powdered sugar, 3 eggs, 380 g flour, 1 teaspoon vanilla paste and 5 g baking powder. For the cream: 200 g dark chocolate, 200 ml sour cream, whipped cream with 30% fat and orange essence. Only 100 grams of chocolate are needed for the icing.

How to prepare pallets: first take the butter out of the fridge, when we use it it must be at room temperature. Mix together with the powdered sugar until a frothy cream results. The eggs are added gradually, we mix after each one.

Separately mix all the dry ingredients for the pallets: baking powder and flour. Then we put them over the frothy cream and mix everything with the vanilla essence. After homogenizing the dough well, it will be poured from a bag with lindens into long shapes. Bake at 180 degrees Celsius for 30 minutes, until lightly browned.

After cooling, we fill them with the cream we obtain by melting the chocolate with liquid cream, preferably in a bain marie. The liquid cream thus obtained is mixed for 2 minutes. At the end, after cooling, glaze with melted chocolate.

the day before I prepared the dough and the cream, I put them nicely in the fridge until the next day, when I took the dough out of the fridge, I spread it thinly on the table sprinkled with flour and a glass in which brandy is served, I cut out the shapes. Very simple. Viel Glück.

Thanks for the recipe! Finally I managed to make the pallets (the page has been open here for almost a month, not for another. :))))! From the quantities given in the recipe, 98 simple cookies came out - probably a few more would have come out if I hadn't made the first round! They are excellent, my son would have eaten them all like that, empty, he even seemed slightly disappointed when I glued them with cream and told him that this is how they are eaten! :) For the filling I used a ganache that I had in the fridge from some truffles made recently and it was ok - the ganache was with cranberries, orange peel and a little Grand Marnier and it didn't hurt them with cookies, so I encourage everyone to play with the flavors, the result is a positive one - the cookies are fine and delicate in taste, so they allow fantasy fantasies in terms of cream.
But I have a question: the original cream from the pallets (at least as I remember them from childhood / adolescence / youth spent near the Liliana confectionery in Bucharest) wasn't it one with butter, not a ganache, as in your recipe? I would really like to find the recipe for that cream.

If it's about cranberries, orange peel and Grand Marnier, we can say that you made a kind of delicacy pallets :) I mean some pallets besides which the ones found in the communist confectioneries look like poor relatives from the country: D I was too small to give the importance of the cream in the pallets at the time, but I tend to think you are right: their cream was based on butter. In fact, margarine-based, considering that butter was a near-luxury ingredient (I remember sitting in huge queues a few times to buy it).

I used that lazy ganache not to make another one, I have no scholarly or refined excuse. :))))) And as far as I can remember, that cream with margarine (you're right, not butter) came better on the pales, it fit better with the texture of the cookie - my opinion, of course! I have a recipe for such a cream from my grandmother, she used it for cakes - and her cakes were the best in the world! - and I'll put it on the pallets to see what it gives. If all goes well, I promise to come back with a comment with the recipe. :)

That being said, I had the courage to make my own raisin cookies, especially since they are very easy to prepare and extremely fast. I chose to use butter and not oil, because butter enriches the taste of cookies and makes them soft and delicious. Moreover, we did not use any growth agent, baking powder or baking soda. The cookies grew due to the eggs and butter in the composition. To flavor the cookies you can use vanilla, rum, lemon or orange peel.

If you don't want to make raisin cookies, you can skip them. You can put nuts or hazelnuts, or other dried fruits. You can also add drops of dark, milk or white chocolate. It is also very good and ordinary chocolate cut into small pieces. Serve the hot or cold forks with a glass of milk. If you want, you can prepare these raisin cookies for Christmas and you can give them as a gift when you visit, along with Linzer cookies or by chocolate chip cookies. I am convinced that they will please everyone and that you will make a fuss with them. In our house they are among the favorites.
