The vegetables (onions, carrots, parsley, parsnips, kapia peppers, celery and zucchini) are cleaned, then cut into small pieces and put to harden in a higher bowl, with oil and a little water, until they become translucent, approx. 10 minutes on low heat, uncovered.

After the vegetables are cooked, add stevia, the cleaned and finely chopped larch and let it boil for approx. 10 minutes on medium heat, uncovered.

At the end, add a little borscht, finely chopped green parsley, and on sweet days, season the soup with beaten egg.

Ever since I wrote the post and until now, summer has almost come. For me, one who had just returned home from other worlds, these Saharan temperatures put me on the wall. But it is good that there is still stevia in the markets. This soup took me out of lethargy, after almost three weeks of frenzy, which I will tell you about soon.
How do you know spring has come? You run through the market after the gypsies with nettles / parsley / stevia / tulips and they run away from the gendarmes. In the end, you catch up with them untouched, hidden behind a car, on the tortoise.

This is what happened to me today, when I really wanted to buy stevia for the first stevia soup this year. And I did it. Even if hidden behind a van :). After such a long winter, stevia (one of my favorite strings) is barely showing. She is young and tender, wonderful to prepare in many ways. But today (that is, yesterday) I wanted soup. Sour with borscht and flavored with a lot of larch. Borscht from my mother-in-law. I found him on the balcony, about three months after I received him. It was perfect. Is my mother-in-law a borscht witch? Is my mother-in-law a witch? I hope Sorin doesn't read this!

You need 2 onions, a leek, a large carrot, a parsnip and some celery. Chop them brown and fry them in olive oil. Or vegetable oil. About 3-4 minutes. Then put them to boil in a pot with 2 liters of boiling water. After 20 minutes, add 2 medium potatoes, cut into cubes. Meanwhile, boil about 750 ml of borscht and let it boil for about 5 minutes. After putting the potatoes in the soup, about 10 minutes, add 3-4 bundles of stevia, cleaned of stalks, and coarsely chopped. In another 2 minutes, add the borscht and chopped greens: onion stalks, parsley, larch. Season with salt and half a teaspoon of sugar, which will counterbalance the acidity of borscht. That's all.

For me, this soup is ideal cold, with green onions and hot, green peppers. But if you can't wait, it's very good and warm.


How do we prepare a delicious soup for Easter?

First of all, for a tasty lamb soup, boil the lamb and leave it until it is almost ready. Being a young animal, it will not last very long. Then add the diced vegetables. I used onions, parsley root, parsnips and celery, bell peppers and carrots. At the end, I added a little green onion for extra flavor. You can also add sorrel, loboda or even lettuce, if you want. The sorrel is sour and fits wonderfully in lamb soup. If you choose not to straighten it, you can put some chopped tomatoes in the soup. They can be fresh tomatoes, canned or even frozen.

At the end you can straighten the lamb soup with sour cream and yolk. You can also leave it untouched, the borscht being enough. However, being a holiday soup, I also like to use sour cream. When straightening any soup, be sure to add hot soup to the cream and egg mixture and never the other way around. By slightly bringing the cream to the temperature of the soup, you will not risk it being cut and you will get a creamy lamb soup. How do we prepare the recipe for loboda, stevia or nettle soup?

Onions and carrots (celery, bell peppers if you have them) cleaned and cut into cubes are boiled in water to cover them.

Put the lid on and let it boil until they are well penetrated.

Add the well-washed rice and leave until it swells well. Fill with water, to be about 3 liters of soup in total and let it boil.

Now add 1 teaspoon of grated salt. When the water boils, add the selected stevia, nettles or loboda, washed and finely chopped.

Let it boil for 3-4 minutes, then add it. It can be soured with borscht, lemon juice or cabbage juice, to taste. Bring to the boil, then turn off the heat.

At the end, sprinkle over fresh, finely chopped greens (parsley, dill and larch).

Recipe for stevia soup with egg

Ingredients for stevia soup: vegetables in the amount you want (onions, carrots, parsnips, bell peppers, celery, potatoes, stevia), olive oil, tomatoes, 1 liter of borscht, larch, two eggs, two tablespoons of flour or cornstarch.

Stevia soup recipe: Chop the vegetables (onions, carrots, parsnips, bell peppers, celery) and boil them in salted water. We test with a spoon if all the vegetables have boiled and we add the chopped potatoes. Then add the tomatoes and olive oil (for more taste you can fry the freshly chopped tomatoes in 30ml olive oil because they will become sweeter before putting them in the soup). Saute the stevia in boiled water with a little salt. Finely chop the stevia, add it over the cooked vegetables and fill with water if necessary. Let it boil for a few minutes, then add the borscht (preheated to near boiling). (If you don't like borscht, you can add lemon juice after you turn off the heat.) Towards the end, beat two eggs with two tablespoons of flour and a little salt. We put the egg composition with the flour in a bag in which we make a small hole and let it flow in the soup that boils in the boil because this way we will form egg lumps. Or we can make a thin omelet that we cut into slices to add to our stevia soup. Then turn off the heat and add chopped larch.

Leave the soup on the fire until the rice is cooked, and a few minutes before taking the pan off the heat, add the larch.

I love spring! The local vegetable market is full of fresh mountain vegetables. There are vendors selling all kinds of leaves on the street.
