Pilaf with mushrooms
I prepared the vegetables, namely: I cut the mushrooms into thin slices, the onion cut into very small cubes, the pepper cut into cubes, then the carrot cut into small cubes and the finely chopped parsley.
In a pan I poured oil, then onion and pepper, carrot, mixing well, a little salt, letting them cook for about 10 minutes, then I put the mushrooms. I mixed them and left them to harden until they lost volume. Put the rice over them and mix well. I seasoned with salt, pepper and paprika. In this composition I poured vegetable soup, prepared in advance. I put it in the oven until the soup is absorbed and the rice is ready. At the end I sprinkled parsley.
