For the countertop ofb, mix the yolks well with sugar until a fluffy cream results, add 2 tablespoons of water, quenched ammonia, flour and mix well, separately beat the egg whites with a pinch of salt and 1 tablespoon of water, incorporate into the yolk cream, mix with a spatula in vertical movements then turn over in a greased and lined tray or with baking paper, leave in the oven over low heat without opening the door for 30-40 minutes.
