One thing I love about breakfast in Thailand – they always serve so many types of freshly made juices and smoothies. It seems like every morning they serve a brand new selection of fruits, different from that of the previous day. I believe that if I were to spend a few more days there, I’d come up with a recipe series for 30 days of smoothies, totally effortlessly.

Of all the fresh juices, my favorite was the banana coconut mango juice.

Be advised – the drink I actually had was a glass of juice, not a smoothie. Instead of using creamy coconut milk, they always used fresh coconut water to make mixed juice drinks. It was so good!

Coconut water can be really refreshing and delicious, but only when it’s fresh. And you need to get the right type of coconut. In some of the tropical areas I traveled to, even though they grew lots of coconut trees and the fruit was so fresh, the flavor of the juice was just so-so.

But if you get the right coconut juice and it’s chilled just right, it will bring an oasis to you on a hot summer day. The juice should still be in the green coconut shell. It should be sweet, with a slightly zesty hint, a mild nutty flavor, and a grassy aroma. Dining in an open-air bistro on a hot summer day, you should definitely order some cold coconut juice along with some grilled seafood and some stir fried noodles. It will be so refreshing, as it washes all the heat away and gets you properly rehydrated. Even better than a pitcher of cold beer!

Back to the banana coconut mango juice I had – it was really unique and tasty. The juice was especially light, because the bulk of the drink was coconut water, and infused with banana and mango. The combination was remarkable. Of course I had to recreate it after coming back!

However, fresh coconut water is a luxury ingredient in Beijing. I can actually find young green coconuts at the market, shipped all the way from Hainan province, but they are nowhere near as flavorful as the ones I had in Thailand. That’s why I went for the best next solution – coconut milk.

Unlike the original mixed juice, this drink is really rich and thick. It doesn’t have the same light texture, but it’s equally as refreshing and delicious. You might think the combination of banana and mango is too thick, but it works out well after blending in ice and cold water. Not too sweet, yet richly flavorful and satisfying.

Mint Chocolate Chip Smoothie

So I love mint, always have, pretty sure I always will. But when I was thinking about making this mint chocolate chip smoothie, I had it in mind to make a super healthy version, that still looked (and tasted) decadent.

So in contrast to my vegan peppermint milkshake which is divine, but made with ice cream and stuff, this one looks and tastes like an ice cream shake but it’s made with bananas and spinach and fresh mint leaves instead!

It’s topped with vegan dark chocolate chunks, but you could also replace these with cacao nibs, if you like! So all in all – a ridiculously healthy smoothie that looks and tastes like a mint chocolate chip milkshake!

This is a simple 6-ingredient recipe that comes together in 10 minutes max.

You need to have frozen bananas on hand that have been frozen for at least 12 hours (and preferably longer). If you like smoothies, then always freeze your excess ripe bananas. Peel, quarter and place them into a freezer bag to freeze so you’re good to go for smoothies anytime.

I used coconut milk for a more decadent taste, but any non-dairy milk will do fine.

Creamy and Rich Watermelon Smoothie

Smoothies are a great way to pack a lot of healthy ingredients into a glass. If you're pressed for time, a smoothie is a convenient on-the-go breakfast, snack, or post-workout beverage, and there are no limits to what you can add to one. Although watermelon might not be the first ingredient you'd choose to add to a smoothie, it makes for one of the most refreshing drinks. Our recipe pairs the sweet watermelon with yogurt, milk (or plant-based milk), and maple syrup for a thick and flavorful drink. Look for seedless watermelons, as they're easier to cut for freezing, don't have seeds that need to be removed, and are a lot sweeter.

Watermelons are marvelous ingredients. Since they have 90 percent water content, they are low in calories with just 30 in a 100-gram serving. Although they don't offer significant amounts of fiber, they are a good source of vitamins C and B  .

Because watermelons have that extremely high water content, the best way of ensuring a thick and creamy smoothie is to freeze the fruit beforehand. You can either cube the fruit and freeze it for an hour before blending it, or better yet, cube the fruit, bag it in 3-cup portions, freeze it, and keep it at hand for whenever you want a glass of this easy and tasty recipe. The third option is to use fresh watermelon but add crushed ice instead of using frozen fruit. You'd get a juice-like consistency, not the texture of a creamy milkshake, but with an amazing flavor nonetheless.


Orange and Coconut Water Refresher

For the longest time, I never experienced a “traditional” Christmas. No gifts exchanged hands and there was no sipping on eggnog around the fireplace. Our first fake Christmas tree finally made an appearance when I was about 9 or ten. Christmas crackers—can we linger on that for a moment? The first time I heard about them, I fully expected a piece of dried, crunchy biscuit with a few pieces of mixed fruit inside. Little did I know, it’s actually a piece of festive cardboard shaped like a large Tootsie Roll that you pull apart with someone else. You get a small prize, a silly paper hat, and an awful joke. Case in point:

Then comes the day after Christmas. The booze and sweets from the day before sets in. Lethargy creeps into your bones, and you don’t want to do anything the next day. The sugar content in this is pretty low, so it’s the perfect way for you to reset your body so that you can tackle any leftovers for the rest of the week.

Quick Note about Vanilla on AIP

One of the gray area ingredients for the AIP diet is vanilla. While vanilla beans are ok for most people, store-bought vanilla extract typically contains alcohol as well as other ingredients. The general advice is that if you’re cooking (i.e. heating) the vanilla extract, then you’ll be burning off most of the alcohol so it shouldn’t be a problem. However, if you’re using vanilla extract in a recipe that isn’t heated, then you should use alcohol-free vanilla extract instead. Since that’s hard to find, we suggest either omitting the vanilla, using a tiny bit of the seeds scraped from the inside of a vanilla pod or else try this pure vanilla powder.

If you’re concerned about reacting to vanilla in any way, then for these AIP smoothie recipes, you can omit vanilla when it’s called for in the recipe. It will change the flavor though.

Directions: Slice kiwifruit into halves and spoon the fruit out. Reserve one kiwifruit, chopped into ¼" chunks for topping. Add one kiwifruit, banana, orange juice, yogurt, and chia seeds to a blender and blend until creamy and smooth (the mixture will be thick). Per serving bowl, place half the mixture at the bottom of the bowl, add two tablespoons granola, one tablespoon each of toasted coconut, nuts, and mint. Makes one bowl.

Ingredients
¼ cup mint leaves
1 cup frozen pineapple
¼ cup cucumber
½ tsp chia seeds
½ lime, juice
1 cup coconut water
2-3 ice cubes

1 cup 100% apple juice or orange juice
1 cup frozen mango chunks
1 kiwi, peeled and sliced
1 cup loosely packed baby spinach
½ to 1 ripe banana (best if peeled, sliced, and frozen first)
½cup vanilla Greek yogurt, or unsweetened Greek Yogurt
1 tbsp agave nectar or honey, optional

Directions: Blend all ingredients together until smooth. Makes two 12-ounce servings.

1 tbsp almond butter
½ tsp coconut oil
