Although she wanted a 4-layer ice cream cake and all different colors, we managed to make her just a small pineapple ice cream cake. Luckily I had fresh ice cream made from raspberries and pineapple from compote from Sun Food.
I found two more boxes of ice cream in Lidl and that's it. I improvised with the candles for the cake, because I didn't think about it and I completely forgot to buy some nice numbers. But the important thing is that he liked the cake, that we could make it quickly and that he received his gifts from us and from his grandparents.
Ingredients for the Pineapple Ice Cream Cake recipe
- for raspberry ice cream:
- frozen raspberries
- 200 ml of sour cream
- 2 tablespoons coconut butter
- a few tablespoons of honey
Preparation for the pineapple ice cream cake recipe
First prepare raspberry ice cream. I have an ice cream machine and practically in 30 minutes maximum I get a super ice cream. The whole meticulous part is to blend the raspberries and then pass it through a sieve to separate the fruit from the small and annoying twigs.
Then I put all the ingredients in the machine bowl and in 30 minutes I get a delicious ice cream.
Then take a round tray, I used a small one 16 cm in diameter, with detachable ring. Grease it with a little oil and put food foil in it.
Then put a generous layer of raspberry ice cream. Refrigerate for 2 hours. Remove the tray and put a pineapple starter pieces of compote. It is sweet and maintains its perfect shape. It's delicious in combination with ice cream, I assure you. Over this layer put a layer of vanilla ice cream with raisins and nuts. And put in the freezer for an hour. Remove the tray and put one last layer of cocoa ice cream with chocolate. Top with a start of oreo crumbs. They are delicious and look great. It keeps its texture very well for a few days even if you keep ice cream in the freezer.
Put the tray in the freezer and leave it for a few hours, until it is ready to serve.
