Dessert tart with plums
Flour, sugar, vanilla sugar, salt, eggs and butter cut into pieces put in a bowl and mix by hand until a homogeneous dough is obtained, which is then placed in the freezer.
While the dough is in the freezer, prepare the filling.
The plums are washed, peeled and cut into pieces, after the seeds have been removed.
Turn on the oven to heat.
Remove the dough from the freezer and divide in two. Spread a part with a twist on the floured work table. Place the sheet obtained in a tart pan greased with butter and prick from place to place with a fork. Add a tablespoon of semolina. Put the plum pieces and sprinkle two tablespoons of sugar and vanilla sugar over them. Spread the second part of the dough and cut strips 1-2 cm wide, which are placed over the tart, forming a mesh pattern. Twisted dough strips can be placed on the edge, around the tart. Grease the tart with an egg yolk mixed with a teaspoon of water and sprinkle two tablespoons of sugar over it. Place the tray in the oven until the tart top is baked.
For the coating, wash the plums, drain and dry, then cut in half and remove the seeds.
For the dough, mix in a bowl with a lid (with a volume of 3 l) the flour together with the baking powder, sugar and vanilla sugar.
Add the egg, cheese, oil and cream. Put the lid on and close the bowl, shake vigorously (about 15-30 seconds in total), to obtain a homogeneous dough.
Grease the tart form (Ø 28 cm) and cover with almonds. Pour the dough into the mold and level. Place the plums on the dough, slightly overlapping, like tiles on a house. Place the cake in the oven and bake.

Baking time: about 20 minutes
For the filling, mix the cream, egg, almonds and sugar well. The mixture is poured over the tart and the tart is reintroduced in the oven for another 25 minutes at the temperatures indicated above.
The tart is placed on a kitchen grill and allowed to cool.
Put the plums, caster sugar, vanilla sugar and water in a saucepan. Boil over low heat until it has the consistency of a sauce. The sauce obtained is placed over the cold cake.
For variation, you can prepare tart with cherries or pears.

How to prepare the plum tart recipe
For the tart
half a cup of milk
430 grams of flour and another 50 grams
For the icing
1 teaspoon grated lemon peel
Put the milk in a smaller pot, add two teaspoons of sugar, stir to melt and remove from the heat when it has warmed up a bit. Add the yeast sachet, mix well and set aside for 5 minutes.
Meanwhile, mix 400 grams of flour with salt in a bowl. In a smaller bowl, beat the egg with the honey and oil. Pour the remaining flour (only 30 grams) and mix the ingredients. Put the composition over the milk with yeast.
Add the composition to the larger bowl with flour, then mix well. Put the dough on the work surface on which you sprinkled flour and knead for 5-10 minutes until it no longer sticks to your hands.
Cover the bowl with a clean kitchen towel and leave it for 1-2 hours in a warm place (until the dough doubles in volume). Take the dough out of the bowl and let it sit on the table for another 3 minutes. Spread the dough with the rolling pin until you get a round shape that fits in the tray with a removable bottom.
Grease the form with a little oil, line it with flour, then place the dough. Preheat the oven. Cut the plums into thicker slices, then place them side by side over the dough so that the tray is full. Sprinkle a teaspoon of sugar on top. Put the tray in the oven for 40-45 minutes (until the toothpick test passes or when the edges of the tart are browned).
Meanwhile, prepare the lemon glaze. Put the sugar and water in a smaller pot and leave the pot on the fire. Bring to a simmer when it starts to boil and leave for another 5 minutes. Take the pot off the heat, let it cool, add the grated lemon peel and mix well.
Carefully open the tray and remove the plum tart. Pour the icing over so that it covers the entire surface of the cake.

When it comes to tarts, you simply have a thousand and one hundred variations, from compositions, fillings, creams, from sweet to salty, with fruits, vegetables and so on.
Every time I make plum jam or any other jam, compote or whatever, I always leave some fruit in the house. So did these plums and because there were no more than 15 pieces, I didn't really know what to do with them, but as a plum tart recipe, I never tried, I said let's see what will come out. And since it was quite late and I didn't want to spend too much time in the kitchen, I quickly made a tart dough that I left in the fridge until I prepared the other ingredients.
What came out ?! An extraordinary tart with plums and mascarpone cream, tender and fragrant. Stay tuned for the list of ingredients and how to prepare it.
- 150 g white flour
- 100 g butter with at least 82% fat cut into cubes
- 1 egg yolk
- 2 tablespoons sour cream
- A pinch of salt
- 50 g fine sugar or powder
Ingredients for the filling
- 12-14 sliced plums
- 250 g mascarpone cream
- 2 eggs
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- A pinch of salt
- 30 g almond flakes
- 1 teaspoon ground cinnamon
Method of preparation:
Preheat the oven to 200 degrees Celsius.
Put the cold butter with the flour, salt and knead quickly with your fingertips, so as to obtain a sandy composition.
Add the yolk, sugar and cream. We also knead quickly enough to bind the dough. Put in a foil and leave in the fridge for half an hour.
Put all the ingredients for the filling, except the plums, cinnamon and mix them. Let's put it aside.
Spread the dough in a tart shape, make a 1 cm edge and prick it from place to place with a fork. Do not be afraid that it is thin, it is enough. Bake for about 15 minutes at 200 degrees, the idea is to turn golden and not burn.
Put the plum slices in the composition of the cheese, the almond flakes and bake for another 30 minutes at 180 degrees.
Let cool in the pan, then cut and serve. Simple, fast and very tasty.
For starters, prepare the dough. Mix all the ingredients, then knead until you get a compact composition. Put it in a container and put it in the fridge for half an hour. Place the dough on the work surface, sprinkled with a little flour, and spread it until it becomes a thin sheet. If you want to prepare the recipe faster, you can buy it commercially.
In the meantime, prepare the rest of the ingredients. Cutting plums in two or four (if larger) is the next step in the recipe. Put the fruit slices in a bowl and add the orange liqueur and grated peel. Then mix the mascarpone cream and sugar in a bowl until the crystals melt. Chop the walnuts and combine them with the 4 tablespoons of sugar. If you don't like sweet desserts, you can give up sugar.
After placing the baking sheet in a tray, put the plum tart dough, then put it in the preheated oven, no more than 10-15 minutes and at a low temperature. After that, take the tray out of the oven and spread the mascarpone composition over the formed crust. Arrange the plum slices in rows so that they cover the entire surface of the dough. Do not pour the remaining liquid into the bowl. Sprinkle the chopped walnuts mixed with sugar on top of the plum tart and put the tray back in the oven. Keep the tart in the oven until you notice that the fruit has softened.
When serving, you can add next to the pieces of tart and vanilla ice cream (you can find the recipe HERE) or another assortment that is to the liking of your loved ones. You can also serve it with a little whipped cream.

2 tablespoons Demerara sugar (an unrefined sugar with large, golden yellow crystals)
400 g plums
125 g flour

75 g dark chocolate
50 g cocoa
175 g ground almonds
3 tablespoons plum jam
2 tablespoons almond flakes
Preparation time : 1 hour and 20 minutes
