  1. In a small saucepan or heat, put the sugar on the fire to cook with minimal heat.
  2. Add the water, the cinnamon stick and cook with a minimum temperature without stopping until it starts to boil.
  3. When the syrup is ready, turn off the heat, remove the cinnamon stick.
  4. Reserve the syrup in a boat or sauce dish to make the pancake dough.

Pancakes with `Little White Hood`

strawberry / apricot / plum jam

Beat the eggs lightly with salt and sugar. Add sour cream, milk and flour. Stir gently until smooth. We should not overdo the mixing because we will get hard / dry pancakes. Add mineral water and grated lemon peel (optional) and mix. If the pancakes are too thick we can add more milk. For thin pancakes it is good to have a more liquid composition.

Let the pancakes cool for half an hour. In this way the ingredients rest a little and have time to mix completely.

Grease a non-stick pan with very little oil. A kitchen brush is very helpful for such a thing.

Pour a polish of the composition (or as needed) so that we cover the pan in a suitable thin layer. If the layer is too thick then the pancakes risk sticking to the pan and we will not be able to turn them. If it is too thin then the pancakes will come out drier. We will have to adjust the dosage so as to obtain the desired soft pancakes.

We serve the pancakes with jam: apricots, strawberries, plums. I can't tell you which flavor I prefer the most. The apricots are fragrant and slightly sour, the strawberries are sweet and fragrant, and the plum jam is dense. All good. What flavor do you prefer in pancakes?


Preparation Peking duck pancakes:

Cake ingredients with red wine and cinnamon:

  • 6 eggs
  • 300 grams of sugar
  • 200 grams of butter
  • 300 grams of flour
  • 170 ml. of dry, full-bodied red wine
  • 1 tablespoon vanilla essence
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1 pinch of salt
  • garnishes: crushed dark chocolate, walnuts cut into large pieces, candied fruit & # 8211 whose total weight should not exceed 200 grams
  • icing: 5 tablespoons powdered sugar, 1 teaspoon grated cinnamon, 30-40 ml. of red wine
  • a little butter or margarine and a tablespoon of flour to shape the wallpaper

Preparation of cake with red wine and cinnamon:

Turn on the oven and set it at 180 degrees Celsius.

In a bowl, mix the yolks and 150 grams of sugar until a creamy mixture is obtained, then add the soft butter in pieces (picture 1). Incorporate the butter in the yolk cream with the mixer (picture 2). Add flour mixed with 1/2 teaspoon of baking powder and garnish to taste (picture 3), I put chopped walnuts, crushed chocolate and candied fruit (pineapple, apricots and raisins), all together not exceeding 200 grams . Add the red wine (picture 4), cinnamon and vanilla essence and mix everything well (picture 5).

Separately, beat the egg whites with salt, add the remaining 150 grams of sugar and continue beating until the sugar is completely dissolved (picture 6).

The composition with yolks, wine and butter is poured over the egg whites and mixed very carefully, only with movements from bottom to top, with a wide spatula, so as to lose as little as possible of the air accumulated in the egg whites. Thus, the cake will grow nicely even if it has very little baking powder.

I don't have small shapes for the cake, all I have are the elongated shapes in which I bake cakes and cakes, measuring 36 x 11 x 10 centimeters (L, L, h), so in such a shape I made the cake. If you have smaller shapes, you can make 2 cakes from this composition. So, prepare the shape, greasing it with butter and then lining it with flour. Pour the cake dough into the form thus prepared and level it.

Place the cake in the preheated oven at 180 degrees Celsius (unventilated), at a height located in the middle of the oven. Bake for 45-50 minutes (mine passed the toothpick test after a fixed 50 minutes, but if you know your oven more & # 8222nervous & # 8221, start testing it earlier).

After it cools down a bit, take the cake out of the mold and place it on a grill, lying on its side, to cool. While it cools, turn it a few times from one side to the other. Meanwhile, prepare the icing, mixing in a bowl the powdered sugar with cinnamon and so much wine, added a little, until you get a composition of consistency. a slightly thicker pancake batter. Glaze the warm cake with this glaze. (It can also be glazed with melted chocolate or it can be simply powdered with powdered sugar).

After the cake has cooled completely and the icing has hardened, cut it into slices and taste it with delight. It has an excellent taste, it is fluffy and with a perfect consistency:


Put the milk together with the sugar on low heat, and bring to the boil. Lightly add the ground walnut kernel, take the fire, add the raisins, lemon peel, rum and cinnamon. Allow this composition to cool, then add the whipped cream. With this cream you will fill the pancakes which you then fold in 4 and place them in a plate greased with butter.

For the chocolate sauce:

Mix the yolks together with the sugar, a little milk and flour until you get a homogeneous composition. Bring the rest of the milk to a boil together with the vanilla extract, liquid cream and dark chocolate cut into pieces. After the chocolate has melted, add the yolk mixture, stirring constantly with the whisk, so that no lumps form. Stir until the sauce begins to thicken and does not taste like flour. Warm the hot pancakes with this chocolate sauce.

I tasted many kinds of pancakes, but the best one was made at a spring fair, where I couldn't find the recipe from the merchant who sold them! :)

So I thought what would be the options to be such fluffy and tasty pancakes and after a few experiments I managed to give birth to this recipe for pancakes, which can be filled with anything to your liking. chocolate, jam, jam, cream cheese, meat, vegetables s.a.m.d.

QUINTESSENCE:

  • flour - 250 gr.
  • flavored mineral water - 400 ml (or plain mineral water)
  • cooking cream - 100 ml
  • eggs - 5 pcs
  • rose water - 4-5 tablespoons or we can use the essence of vanilla, lemon, almonds (but with rose water will have a unique aroma)
  • chocolate - to taste
  • bananas - 3-4 pieces
  • salt - a powder
  • oil - 50-100 ml

ALCHEMY:

In the first phase, beat the eggs in a bowl, add the mineral water over it and mix with a whisk. Gradually add the sifted flour and mix continuously, then add the cooking cream, salt and rose water and continue to mix until we have a homogeneous and creamy composition.

Heat the Teflon pancake pan over medium heat and add a few tablespoons of oil from the cup. After the oil has heated up, we pour the excess oil back into the cup and add it to the pan of our caltite composition with the help of a polish. Rotate from the wrist, in a circular direction so that the dough is evenly distributed over the entire surface of the pan.

After about 2 minutes turn the pancake on the other side and bake for another 1 minute.

The pancakes must be as thin as possible so that we do not eat the uncooked shell!

After we have made all the pancakes, we grease them with chocolate and roll them together with a banana slice cut long in 2 halves or long cut in 4.


Vanilla hot chocolate homemade recipe

50 grams of dark chocolate
two tablespoons of grated starch
a teaspoon of brown sugar
a teaspoon of vanilla sugar
half a teaspoon of cinnamon
