Mix half the amount of sugar and eggs until smooth.

Put the rest of the sugar in a bowl and caramelize over medium heat until golden.

Incorporate the resulting composition into the egg and sugar mixture and simmer for 5 minutes, stirring constantly to prevent sticking.

Place a wafer sheet on a dog, spread with a part of the caramel cream, put another wafer sheet over it and spread with cream. Repeat the operation until the sheets are finished.

Place something heavy on top of the cake and press well to make sure there are no air gaps.

Serve the cake after at least 3 hours.

Along with honeycombs and stuffed nuts, this cake is specific to the feast of the Nativity, which we know from childhood. It's very sweet. It has a crunchy texture and a delicate caramel aroma.

It is easy to prepare at home. You need some large wafer sheets, which you can find in any supermarket, in the sweets section.

Neapolitan with chocolate cream

• 4 rectangular wafer sheets
• 200 g of butter
• 200 g of ground walnuts
• 200 g of raw sugar
• 6 yolks
• 200 g of powdered sugar

Grind the walnut kernels and brown them a little in the oven.

Put the raw sugar in a caramelized kettle. Keep a close eye on it so it doesn't burn. Otherwise it will take on an unpleasant bitter taste.

Cut the butter into pieces and add it over the caramelized sugar. Stir and set aside the cream.

Put the yolks and powdered sugar in a bowl and rub them until they turn into a fine cream. Add it over the caramel above and put the pan on the fire.

Let the cream simmer until it thickens, stirring constantly. Add the walnut kernels and mix until smooth.

Place a wafer sheet on a large tray or chopping board. Put a quarter of the hot cream and level evenly. Add the second wafer sheet and spread another layer of cream. Do this until the last sheet. Cover the cake with plastic wrap and place something heavy on it to stick well.

Leave it in the balcony in the cold or in the fridge until it hardens well.

When ready to serve, you can cut it diagonally or straight, to get squares or rhombuses. Remove the edges first. It is recommended to use a knife with a wide blade, which cuts well, so as not to damage the sheets.

Wafer cake with shit cream and lemon

It is a simple but tasty and fragrant cake. I didn't have enough nuts, so I improvised and added sunflower seeds mixed with some pumpkin seeds, which I never miss from home, along with flax and sesame seeds, the seeds being very healthy and recommended a teaspoon. , daily, for the heart and digestive system.

Finely chop the walnut using a mincer or cut with a knife.

Put 600 g of sugar in a saucepan and let it melt on the fire. Stir to speed up the process and make sure it caramelizes evenly without burning.

When all the sugar has melted, add 375 g of diced butter.

Stir until the butter has melted and then turn off the heat. Don't worry if the butter hasn't incorporated and the fat remains on top. Stop the fire. Set the pan aside.

In a bowl mix / mix 9 eggs with 75 g powdered sugar.

Add the cream obtained over the caramel with butter with the polish. Put one polish at a time until the cream is finished.

Put the chopped walnuts on the fire again and add the caramel cream obtained over them.

Stir and cook for 2-3 minutes. Turn off the heat and add 1 teaspoon of vanilla essence. mix

Set the cream aside to cool slightly. Then divide the caramel cream into 4 equal parts.
On a bottom put the first wafer sheet (27 × 37cm). Spread some of the cream on top.

Repeat the process until you reach sheet no. 5 above. Place a shredder over this sheet and then a weight.

Leave to harden overnight. If you want to speed up the process, put everything in the refrigerator for 3-4 hours.
Cut the edges and then divide into equal pieces.
