Plus, I have boys who always have friends at the house, and this sliders recipe is PERFECT to feed hungry kids! The fact that these cheeseburger sliders taste almost exactly like White Castles is a bonus. And of course, since these are homemade they’re way better!

Bacon beef sliders are the perfect summer party dish

These beef sliders will spice up any party or BBQ dinner with the family.

SERVINGS: Makes 6 sliders

Ingredients:

For patties:

  • 1 1/4 pound ground beef (80 percent lean)
  • 1/4 pound ground bacon
  • salt and fresh ground pepper
  • 6 mini burger buns (rolls)

For toppings:

  • cheese slices
  • lettuce
  • onion
  • tomato
  • pickles
  • ketchup
  • mustard

Instructions:

  1. Place beef and bacon into a large mixing bowl and season with salt and pepper. Mix together until fully combined.
  2. Heat up your grill or a grill pan over medium-high heat.
  3. Form six equal patties and place them onto the grill to cook for 5-6 minutes on each side.
  4. About two minutes before the patties are done, place a piece of cheese over each patty and allow cheese to melt before removing from grill.
  5. To assemble, place burger slider patties on buns and add any remaining toppings and condiments of your choice and serve.

It's Friday. Yay! And not just any Friday, but the Friday at the end of a very long week. Because this week was Spirit Week at the girls' school, which means specific dress up instructions. Daily. Which makes for stressful mornings. Daily!

I actually love dress up days. in theory. I love the fun and camaraderie it creates, and I love the idea of mixing things up and adding some excitement to the day to day routine. But what I don't love about it is the way it makes my kids crazy, because they want just the right costume, or they're jealous of their sister's costume, or they're worried about whether their classmates will even be wearing costumes at all. So much stress. and all for a day that's supposed to be fun. Oy!

The good news? We made it through the week. We did crazy sock day and animal print day and book character day and Dr. Seuss Day and finally, today, crazy hat day. And even when we didn't think we could pull together a costume, we did! Granted, some we finished pulling together just minutes before the bus came, but we did it. And now we can breathe a big sigh of relief.

How To : Make Perfectly Sized, Uniform Patties for Sliders & Mini Burgers Without Getting Your Hands Dirty

There is no such thing as a pulled pork slider. In fact, there is no such thing as a pork slider. Or a chicken slider. Or turkey or fish. The term "slider" actually means a lot more than just a hot miniature sandwich, and if it's not beef, it automatically missed the first cut.

Sorry, but that is not a slider above.

Sliders have been around since 1916 and were invented by the founder of White Castle. As Serious Eats explains, for a sandwich to be classified as a true slider, it has to meet a certain set of criteria. If the meat is anything besides a beef patty, it's automatically out.

The patties should be two ounces or less, topped with American cheese and pickles, and steam-cooked on a bed of onions with the buns piled on top. As a matter of fact, at White Castle, the beef never even touches the griddle.

Whether you're making real sliders or just mini hamburgers, the size of the patties is important. You want them to be the right size for the buns, and they won't cook evenly if they're all different sizes.

There are burger presses for both regular-sized and mini burgers, but one-use gadgets are annoying and just add to the clutter in your cabinets. A kitchen scale will ensure your patties are all the same weight, but how many of us actually have one?

So, how do you make perfectly uniform patties without any special tools? The answer is right in your kitchen drawer.

Measuring cups are perfect for making burger patties. Just scoop some ground beef into the cup and use a spoon to press it flat, then turn it over onto a plate or spatula. If you do it right, you never even have to get your hands dirty!

Alice from Savory Sweet Life got this tip from a Whole Foods employee. She uses plastic wrap to make sure the burgers stick to the lid, but if you don't have any, they should still come out fine.

You can even use an ice cream scoop to get the same shape every time.

In no time you'll have a bunch of perfectly uniform patties, ready to be steamed. Or, if you prefer, throw them on the grill, squirt on some ketchup and call it a day. Just try not to call them sliders.

Begin by making the tangy butter sauce.

Simply whisk together the butter, mustard, Worcestershire sauce, garlic powder, salt and poppy seeds. Set aside.

Using serrated bread knife, cut the rolls in half, leaving the top and bottom halves intact.

Spread mustard over the rolls, then place the bottom half, cut side up, in a 9-inch square metal baking pan. Place half of the cheese in an even layer over the bottom, followed by all of the ham, followed by the remaining cheese. Cover with the roll tops.

Evenly spoon the butter sauce over the top, letting it drip down the sides.

Bake for 22-25 minutes, until the top is golden brown and toasted.

Let cool for 15-20 minutes in the pan. Using a large spatula, carefully transfer the sandwich block to a cutting board. Slice into sandwiches, then serve warm or room temperature.


Ingredients for Reuben Sliders

CORNED BEEF: I love corned beef sandwiches because they’re so salty and flavorful from the pickled beef brisket. I like mine sliced super thin, but you can get it sliced any way you prefer from your local meat counter.

HAWAIIAN ROLLS: You can use any slider rolls for this baked Reuben sliders recipe, but I love the sweetness of Hawaiian rolls. It just adds a little something extra to these traditional Reuben sliders.

You’ll also of course need the traditional Thousand Island dressing, sauerkraut, and Swiss cheese to finish these delicious and easy Reuben sliders.


If you like schnitzel, you’ll love schliders

I have never been shy about my love of schnitzel. I once ate it twice a day for five days in a row in Vienna. Whenever I visit Germany, I need an immediate schnitzel infusion within hours of landing or I am not happy. If schnitzel is on the menu anywhere, I am hard-pressed not to order it. I don’t care if it’s veal, pork, or chicken.

Here in Chicago we used to have a magical little spot called Olga’s, ostensibly a neighborhood convenience store specializing in Polish merchandise, but really just an excuse for Olga and her sister to sell sandwiches and soup off a table in the back. The schnitzel sandwich at Olga’s was literally five lightly pounded chicken breast halves breaded and fried and stacked into a wall of schnitzel on white bread. It fed two hungry people to near explosion, and it was one of the single best sandwiches in existence. I miss it like a dull ache.

Recently my dear friend Chef Paul Fehribach of Chicago’s Big Jones restaurant made my husband and me a pork schnitzel dinner, and it was, as schnitzel should be, a portion of gargantuan abundance, nearly falling over the sides of the dinner plates. Garnished with a sauce of crème fraiche, mustard, and diced pickles, it was the platonic ideal of schnitzel. Despite our best efforts, and in part due to some extraordinary homemade spaetzle, we were unable to finish. Paul had also made us some lovely little dinner rolls, so the next day I looked at the rolls and the leftover schnitzel and sauce and thought that some sandwiches were in order. My husband looked at my lunch and asked, “Sliders?”

If you love schnitzel as huge portions on a plate, you will also love smaller pieces of schnitzel on soft little buns with a schmear of sauce for an acidic bite and richness. Make them in large batches for parties or just as a little treat for yourself. These small schnitzel sandwiches are the opposite side of the coin from Olga’s, but they’re no less satisfying.
