With a spoon, incorporate in the egg white foam mascarpone. Put a tablespoon of cream and mix slowly, from bottom to top, until all the cream is incorporated. The composition is refrigerated.

The biscuits are soaked in coffee and arranged on a plate. They should not be soaked in coffee because they soften too much. with cocoa. Put everything in the refrigerator for a few hours. Preferably prepare in the evening for the next day.
