Tofu skewers with vegetables and curry sauce


Cut the tofu into cubes and prepare the vegetables for the skewers (tomatoes, onions and peppers).

Put the skewers in a bowl with water to moisten, so as not to catch fire on the grill.

We alternate the tofu cubes with vegetables on the skewer.

Grease the skewers with oil with a brush and put the grill in the pan over medium heat.

Sauce preparation:

We grate the ginger. Tomato paste is mixed with water, grated ginger, paprika, pepper, honey and chopped parsley.

At the end we add a little curry powder.

We serve the skewers with a salad of vegetables, sprinkling with plenty of sauce.

  • 2 tomatoes
  • 1 cup broth
  • 2 tablespoons oil

  • 2 cm ginger shaved

  • 1 bay leaf
  • ½ teaspoon turmeric
  • 1 tablespoon sour cream
  • 1 teaspoon garam masala mixture

In a deep frying pan put the oil and all the spices, less garnish the masala and leave for a few seconds, until the flavors begin to release, then put the finely chopped onion and garlic, mix. When the onion becomes translucent, add the diced tomatoes, the tomato broth and 1 cup of water, cover with a lid and simmer until the sauce decreases. After the sauce has dropped, blend the mixture to obtain a fine sauce, then add the browned meat, garnish the masala and sour cream, mix well and leave on the fire for 5 minutes. Turn off the heat, put the chopped coriander and cover with a lid.

Chicken Curry with Vegetables - Recipe

• 1 large, boned chicken breast
• 1 glass of broth or tomato sauce
• 2 onions
• 2 bell peppers (orange and green)
• 2 carrots
• 1 cup of water
• 4 tablespoons oil
• 4 cloves of garlic
• 2 tablespoons curry
• 2 teaspoons turmeric or ginger (powder)
• 2 teaspoons paprika
• ½ teaspoon of cinnamon
• salt and pepper to taste

We wash and clean the vegetables. Finely chop the onion and sauté it with the 4 tablespoons of oil and a little salt, until it becomes transparent. Cut the chicken breast into cubes, which we fry over the onion for 2-3 minutes, until it changes color a little.

Sprinkle with spices, including crushed garlic), and leave for another 2-3 minutes for the flavors to blend well.

Add the peppers and carrots cut into strips, respectively slices / cubes. Mix well, and finally add the broth or tomato sauce and water. Homogenize and leave on the fire for a quarter of an hour, or until the meat is cooked, and the vegetables are half soft, half crispy.

Chicken curry with vegetables is ready. Sprinkle a few green parsley leaves on top. It can be served with rice, natural potatoes or baked with rosemary, quinoa, polenta, bread or stick. It is a delicious food for those who can tolerate a mixture of spices.

Other vegetables can be added to the recipe, such as pumpkin, peas, cauliflower, or other flavors: coriander, cumin, basil, thyme, lemon, etc.

What a good look! Even today I think I want to cook a curry differently than I have always eaten at the Indians, and tofu seems a good choice.
One question: do you really need coconut milk or can you skim milk, right? Can it be made with telemea instead of tofu?

yes, it can be made with lightly salted telemea, it looks like paneer. instead of coconut milk you can also use real milk and at the end you can even add 1 tablespoon of sour cream. coconut milk fits very well with the aroma of this spice, that's why I opted for it and it was really good for fasting.

Strawberry salad with tofu and basil from Sprouted Kitchen

Today I am looking for new tastes and combinations. After a summer full of tomatoes and lycopene, I feel the need for a special taste. And if I want something healthy, but that looks good, I know exactly that I have to go to the site at Sprouted Kitchen. I love the photos on this blog, and the simple ingredients with which it manages to create original and very natural dishes.

For today I chose Strawberry Salad with tofu and basil, because I have a bag of fresh basil with large leaves, bought from Domenii Square on a sunny day, and because I also identified a stall with some late, withdrawn strawberries and shy between stacks of tomatoes and cucumbers. The box of tofu in brine from Inedit has been waiting for its interpretation for 1 week, so I say that I made the perfect choice.

Ingredients for Strawberry Salad with tofu and basil

Two hands full of arugula leaves

1 cup thinly sliced ​​Chinese cabbage

1 handful of fresh basil (if the leaves are large, you can cut them, if they are small, the salad will look great with the leaves left whole)

200 g of fresh strawberries

a few roasted and crushed pecans

1 box of tofu cut into equal pieces and dried between napkins

a piece of gorgonzola cheese

4 tablespoons extra virgin olive oil

1 tablespoon apple cider vinegar

1 tablespoon freshly squeezed lemon juice

1 finely chopped red onion

a powder of pink Himalayan salt

1. Crush the gorgonzola cheese and mix it with the onion in the olive oil. Add pepper, salt and vinegar.

2. Wash the arugula and cabbage, and put them in a large bowl. Cut the strawberries into thin pieces and add them to the bowl together with the pecans and basil.

3. Heat the grill. In a small bowl, mix the olive oil, pepper, oregano and lemon juice, and marinate the pieces of tofu in the mixture. Put the tofu cheese on the grill and keep it on each side for 3 minutes.

4. Mix the salad with the gorgonzola vinaigrette and serve with the tofu pieces on top.

Fry in marinated sauce

It's summer, it's sunny !! & # 8230 what more could we want on a weekend, than to go on a picnic with family, friends, and of course we have to eat.

In order not to waste time on green grass with the preparation of a barbecue, we give you a better solution, preparing from home some skewers of poultry, vegetables, which have been in the marinade since the evening, becoming very tender.


Combine the meat with a tablespoon of curry paste and 2 tablespoons of yogurt. Heat the grill to medium temperature. Put the meat on the skewers and fry for 10-15 minutes.

Heat the oil in a saucepan and fry the onion. Add the remaining curry paste and simmer for 2 minutes. Quench with coconut milk, remaining yogurt and add almonds. Boil simmered for 10 minutes.

Meanwhile, boil the rice according to the instructions on the package. In the last 4 minutes add the green beans. Drain the liquid and combine with the zacusca and parsley. Sprinkle the skewers with the curry sauce and serve with fresh buns.
