How to prepare sausage skewers

Roll the sausages in the puff pastry. Shape into small rolls and cut them into rings (1). Arrange the rolls on a work surface and place them in a row: 4 for each skewer. Insert the slices of puff pastry and sausage with a wooden toothpick (2) and place them on a baking sheet lined with parchment paper. Bake in the oven at 190 ° C for 10-15 minutes. Once ready, let them cool and serve. Your sausage skewers are ready to be enjoyed (3).


Let's see together how to prepare the puff pastry skewers with olives and frankfurters:

First we take the pastry out of the refrigerator and turn on the static oven at 200 ° C.

Prepare the ingredients: remove the brine from the olives, rinse them and dry them with kitchen paper, then take the frankfurters and cut them into slices about one centimeter thick (about 12 slices must come for each frankfurter).

Unroll the puff pastry, which in the meantime will have softened, and cut 8 strips of about 1.5 centimeters thick.

Let's go to form our skewers: we take the long toothpicks from the spit and we stick in the center the beginning of a strip of pastry we continue with an olive, again with the dough and so on until the end of the strip of the pastry, forming a spiral between the pastry and the olives. For each skewer there will be 8 olives interspersed with the strip of pastry. so also prepare the other 3 olive skewers.

For the sausage skewers the procedure is the same: skewer a strip of pastry, then a washer of sausage, the sheet again and so on, putting 6 slices of sausage on each skewer and always ending with the sheet.

Place the skewers on a plate covered with parchment paper, brush the surface with a little milk with the help of a pastry brush and bake for about 20 minutes, or until golden.

Remove from the oven the puff pastry skewers with olives and frankfurters and serve warm, perhaps accompanied by sauces such as ketchup or mayonnaise.

How to make puff pastry skewers

Cut the sausages into slices about 1 cm thick. Cut the skewers into two halves (about 12.5 cm) to make portions more practical to handle and eat.

Put the sausage cut into slices on the skewers, leaving about 2 cm of distance between them. Repeat the operation also with the pitted olives until all the ingredients are used up.

Cut the puff pastry in strips about 2 cm wide. For this operation, use a knife or a pastry cutter with a smooth or knurled washer. Turn on the oven at 180 ° so that at the end of the procedure it will have reached temperature. Continue with the preparation by sticking one end of the strip of puff pastry onto the skewer.

Roll up the puff pastry between a piece of sausage and the other for the entire length of the skewer.

Arrange the skewers of puff pastry on a baking sheet lined with parchment paper.

Brush the skewers with the previously beaten egg for more browning (optional) and add sesame or poppy seeds (optional). Bake in a preheated oven at 180 degrees for about 15-20 minutes, it depends on the oven. When the skewers are golden on the surface, turn off the oven and let them cool.

Serve the skewers of puff pastry accompanied by sauces to taste.

I thank my friend Daniela for the delicious recipe she passed me .. try them too for a tasty aperitif.

- 100 gr. of Emmental in pieces
- 200 gr. of sausage in pieces
- 20 gr. of grated Parmigiano Reggiano
- 1 egg (about 60 g)
- 1 pinch of salt
- 1 pinch of ground black pepper
- 250 gr. of ready-made puff pastry
- 1 egg yolk
- 1-2 tablespoons of milk

Put the Emmental in the jug, chop: 4 sec. speed 6.
Gather on the bottom with the spatula.
Add the sausages and mince: 4 sec. speed 6.
Gather on the bottom with the spatula.
Add the Parmigiano Reggiano, egg, salt and pepper, mix: 15 sec. speed 4.
Preheat the oven to 180 & # 176C.
Line the baking sheet with parchment paper.
Open the puff pastry on the work surface and, with the help of a pastry cutter (Ø 8 cm), cut out many round discs (about 40 discs).
Place a spoonful of filling in the center of each disc and cover with another disc, pressing the edges well.
Arrange the discs on the previously prepared oven tray, taking care not to get them too close to each other.
In a bowl, beat the egg yolk with the milk and brush the chests.
Bake in a hot oven for 20 minutes (180 & # 176C).
Serve lukewarm.
