Cheesy Canapés with Roasted Tomatoes and Anchovies
Updated September 3, 2014
Slices whole wheat bread, crusts removed and quartered
Small circular slices of fresh mozzarella cheese
Roma tomatoes, sliced thinly
Tablespoons freshly chopped parsley, for garnish
Arrange the bread squares on a rimmed, ungreased baking sheet. Pop it into the oven for 5 minutes. It will get the bread a little toasty.
Layer the cheese slices on top of each bread square. Followed by an anchovy half, and a tomato slice.
Bake for about 12 minutes, or until the cheese has melted and the tomatoes are good and roasted. If you need to switch the oven to broil a few minutes, that's fine.
Serve garnished with chopped parsley!
27 Gorgeous, Celebratory Canapé Recipes
Christmas may be over, but party season is still in full swing (and will be straight through summer, according to us.)New Year's Eve is just a few days away, and after that you've got your mid-January Let's Celebrate Something So We Don't Just Sleep For Six Months affairs to host and attend. We're here to help improve your fancy snack arsenal. Winter is definitely the season to whip up group-oriented comfort food, like baked brie, party dips, and naturally, nachos, but sometimes when we're feeling a little shlumpy, we crave something a little more upscale. We are referring, of course, to canapé recipes.
Canapés have picked up a lot of different definitions over the years. Some people use the word canapé to refer to any small appetizer you can eat in one or two bites with your fingers. Others insist that it must be a decorative appetizer on a round, square or rectangle of toasted or fried bread. For our purposes today, we're thinking of a canapé as something pretty to look at, easy to eat, usually on a toast or cracker, but not always (since we know there are party guests who just don't want to eat a piece of bread with every bite). Here are 27 canapé recipes to help you end 2014 on a classy note and start 2015 with a little extra glam. 'Cuz you deserve it.

Don’t you just love a dish that turns out even better than you had imagined? And not only that, it’s literally no trouble to make, screams summer time and makes a perfect side dish to almost any meal.
We had my mom over for Mother’s Day and we grilled steaks……I had stopped at the Farmers Market the day before and picked up the most delicious looking tomatoes and wondered what they would be like if I sliced them up, sprinkled them with a little mozzarella, parmesan and fresh basil and popped them in the oven for a bit.
They were even better than I had imagined!!
You can certainly change these up by using other cheese, like Queso fresco with the parmesan would be amazing I’m sure! Fresh rosemary or oregano would be another option in-place of the basil. You really can’t go wrong here.
These little gems were such a big hit at dinner, I had to make them again a few days later for myself for lunch! These Cheesy Baked Tomatoes stood up perfectly for a light summertime main course. Can you imagine these on your next burger?! I’m planning to try that next!
