The secret of a successful pizza is the dough. What I cooked is not the classic pizza dough (for the difference, I will make that one day) but a classic dough, which I learned from my mother, which can be used in several preparations. Dough ingredients:

  • a packet of soft margarine
  • 2 eggs
  • 8 tablespoons water
  • a tablespoon of vinegar
  • salt (a small teaspoon)
  • flour

You can use any topping you want. But for what I have prepared, it is necessary:

  • 400 gr. good quality bacon, without scratches / bones
  • 150 gr. br & acircnză of sheep
  • 150 gr. mozzarella
  • mushrooms (optional)
  • tomato sauce

Dough & Icircn in a larger pot or bowl, put all the ingredients. To start, we put 2 generous handfuls of flour. For the pizza, cut a piece of the dough put at least one day before in the fridge, spread it well, then put it in an ordinary oven tray. By the way, I forgot - the oven must be very well heated before you put the pizza in it. But let's get back to the preparation: we put the sheet & icircn tray, cut the edges with a knife (we do not throw them, we use them for decoration) and then we grease the dough with a very thin layer of tomato sauce, over which we put the topping, & icircntins evenly on the whole dough . We use the cut edges (optional) in the following way: we mix them well & icircn m & acircnă, we spread them with the twister and we cut them into thin slices, which we put, twisted or not, over the topping. I put them in the form of a grid, but everyone can arrange them within the limits of the imagination.

Then put it in the oven, until the topping is closed and the dough is baked (it takes, say, a maximum of 20 minutes). To make the edges of the dough crispy, cut mozzarella or cheese sticks, line them on the edge and roll a little. Place the tray in the preheated oven and leave on medium heat for 15-20 minutes.

Ingredients

  • 150 g of water
  • 30 g of olive oil
  • 15 g of fresh yeast or an envelope of dehydrated baker's yeast
  • 300 g of strong flour (you can also use normal flour, although it is better than strength)
  • 1 teaspoon of salt mocha

Preparation

In the glass, add water and oil. programmer 30 seconds, temperature 37º and speed 1.

Add the yeast and stir for 5 seconds, speed 4.

Add flour and salt. programmer 1 minute, glass closed and top speed. We look at the texture of the dough: it must be elastic and soft, but not stick to the fingers. If it sticks to you, add a little flour and reschedule for 30 seconds, glass closed, top speed. If you see that the dough is very hard and not very elastic, it is because it lacks water. So add a little (very little) hot water and set for 1 minute, the glass closed and the top speed.

When we like, we take the dough out of the glass and form a ball with our hands. Put the dough in a glass or plastic bowl, cover it with a kitchen towel to heat it and let it rest and double its volume in a warm place, without electricity (you can put it in the oven or in the oven microwave off and leave it at least 30 minutes).

As you have seen in the ingredients, it is very very very important to drain all the ingredients very well, because if they do not, they will release water during cooking and will make the dough too soft.

Spread the dough with a rolling pin or with your hands. Spread the baking tray with olive oil and sprinkle with flour. Place the dough on top.

With a spoon add the crushed tomato and spread it very well. Sprinkle with salt and a drizzle of olive oil.

Cut the mozzarella into slices (important to be very well drained) and place it on top, leaving a separation between them (so when it melts it will be well stretched). Sprinkle with salt.

Put the black olives, bacon and ham on top. Sprinkle with oregano and a drizzle of olive oil.

With the oven preheated to 230º, we put the tray at level 1 (the rail that is at the bottom of the oven) and if we have a fan function we put it. We'll have something Minute 12. Make sure it doesn't burn underneath.

Notes

When it's left, and if I'm going to eat it in the next few days, what I'm doing is keeping it in the fridge already in pieces wrapped in white paper. I take it out of the paper (don't throw it away) and put it on a plate. Heat it for a maximum of 1 minute in the microwave so that the cheese melts well. Then I put the white paper on a plate or pan over the fire and place the pizza on top. Heat it over medium heat until crispy underneath. So easy!! And avoid turning on the oven. If you want to freeze it for longer use, wrap it tightly in plastic wrap in individual pieces and keep them in a freezer bag. Then take out the pieces you are going to eat and with the preheated oven at 180º (half-height tray), place the pizza on the tray with baking paper (so you won't have to clean them later) and heat it for about 10 minutes. (when you see that the cheese is already melted).
