This simple, colourful Italian Easter bread is a real favourite and is prepared by families across Italy in the days leading up to Holy Week.

Ingredients

  • 3 tsps of dry yeast
  • 1/3 cup of brown sugar
  • 1 cup hot milk
  • 1/2 cup plain flour
  • 1 tbsps lemon juice
  • 6 tbsps butter, melted and cooled
  • 1 tsp salt
  • 1 tsp vanilla
  • 4 eggs
  • 4 painted eggs for decoration
  • A beaten egg with water
  • Almond flakes

Method

  1. For the dough: Dissolve the dry yeast in warm milk and stir for 5 minutes
  2. Gradually add the eggs, flour, sugar and other ingredients and beat well.
  3. When the dough has pulled together, turn it out onto a lightly floured surface and knead by hand until smooth and elastic. (You can of course also use a food processor with a dough hook).
  4. Place the dough in a greased bowl and turn it over once to coat the top.
  5. Cover with a damp tea towel and allow the dough to rise in a warm place, for about 1 hour or until doubled in size.
  6. Sprinkle the work surface with flour and knead the dough again.
  7. Divide into 3 balls.

We absolutely love Easter Bread. The taste and texture of it is actually very similar to Challah Bread only it uses milk instead of water as liquid for the dough. Plus, a proper Easter Bread obviously needs to function as an Easter egg nest, too, right? It’s downright adorable.

After a delicious Roast Lamb Shoulder, Easter Bread is what we used to eat for dessert later on in the day. With butter and a little homemade apricot jam and a big cup of freshly brewed coffee. Oh the memories…..We know you’re going to love this favorite Easter tradition!


Italian Easter Bread

Gently heat the milk, sugar and butter until the butter has melted.

Leave to cool until just warm and add the yeast.

Place the milk mixture, beaten eggs, flour and salt into a stand mixer fitted with a dough hook and gradually mix until you have a smooth and pliable dough which bounces back when pressed (if you don&rsquot have a mixer this can be combined and kneaded by hand).

Leave to rise until doubled in size (1-2 hours at room temperature).

While the dough rises add 1 tbsp. of vinegar into each cup of water along with the food colouring into each.

Then add the eggs and leave to soak in the colour for 5 minutes.

When coloured leave them to dry on a cooling rack.

When the dough has risen cut into 6 equal pieces and then roll each to about 20cm long.

Twist the dough and form into a ring then place a coloured egg into the middle of each.


How do you make yeast-leavened bread?

I use Fleischmann’s RapidRise instant yeast, which is added directly to the dry ingredients. The advantage of using instant yeast compared to active dry is you need only one rising step after shaping the bread into wreaths. This cuts preparation time in half!

I like to make my own homemade oven proofing box to create a warm and moist environment for the dough to elevate and expand. Just simply place the dough in a pan and cover with plastic wrap then place it in the oven.


Easter bread (eggy bread)

In a medium pot, place eggs in cold water with vinegar and food colouring. Bring to a boil and then remove from heat and allow eggs to cool in water. Turn eggs to get an even colour.

In a small pot or microwave, heat milk to luke warm temperature. Add 1 T sugar and yeast to the milk. Stir to combine and allow yeast to develop (becomes foamy/bubbly on top). Add eggs to the milk mixture and stir till well combined. In a food processor or electric mixer (dough hook), place your flour, salt and 4 T sugar. On a slow/medium speed add the milk to the flour mixture. Slowly start to add the butter, mixing well in between additions. The dough should be soft and velvety after kneading.

Lightly grease a bowl and allow dough to rest, covered with a damp cloth/plastic. Set aside in a warm area until the dough has doubled in size (1hr – 1hr 30 mins). Knock back dough and divide into 3 equal balls. Roll out 3 pipes, if dough bounces back allow to rest covered for 10 minutes. Plait the 3 “pipes”, tucking/pinching the ends together. Tuck the dyed eggs in between the plaits. Loosely cover with plastic or kitchen towel. Allow the bread to rise for 40-45 minutes. Pre-heat the oven to 180C. Make an egg wash with an egg and 2 t warm water. Brush the bread with the egg wash, try avoiding the dyed eggs. Bake for 20 – 30 minutes, until golden brown.

Cook's note: To check if the bread has baked through, tap on the bottom of the tine and listen for a hollow sound.

In Italy, bakers whip up a corona pasquale around Easter - a bread ring studded with coloured eggs. In Greece, the dyed eggs are nestled into a plaited bread. But you don't need to be in Europe to enjoy them!

In a large mixing bowl, add the flour, yeast, sugar, salt, eggs, vanilla extract and lemon, then gradually incorporate the lukewarm milk (not too hot) and butter. Mix together until it forms a dough like consistency.

Knead the dough, either in a food mixer using a dough hook on a medium speed for 5 minutes or by hand for 10 minutes. Place the ball of dough back into the mixing bowl, cover with a sheet of oiled cling film and leave to prove in a warm place until it has doubled in size. This make take a few hours.

Once the dough has fully proved, knock it back by gently punching out the air created in the dough. Split the dough into 8 equal pieces and halve each piece again. With your hand roll two of the pieces of dough (one by one) into small sausage shapes approximately 20cm long.

Pinch together the ends of the two sausages so that they are attached to each other and then gently twist one piece of dough over the other to create one long twisted piece of dough. Shape the twisted dough into a ring shape and secure the two ends together (similar to the shape of a Christmas Wreath)

Place all 8 rings of dough onto a baking sheet lined with baking paper and cover with another sheet of oiled cling film or clean tea towel and leave to double in size again.

Preheat your oven to 180°c (160°c, gas mark 4)

Once your dough rings have doubled in size, brush them with a little extra milk and place in the oven for 20-25 minutes to bake until golden in colour.

Once the bread has baked, leave to cool slightly on a wire cooling rack then decorate. To make the icing, mix together the icing sugar with a few drops of water until you reach a thick consistency. Using a teaspoon, flick the icing forward and back across your Easter bread to give a drizzled effect.

Sprinkle each of your Easter breads with coloured sprinkles and insert 3-4 mini eggs into each one. You will need to push hard to insert them so that they stay in place.

The dough for this Italian Easter bread is a very rich dough, containing milk, eggs, and butter.

This makes it very moist and slightly sticky as it comes together. But, after a bit of kneading, it becomes silky smooth and very easy to work with.

After one rise, this fragrant dough gets divided into three pieces and rolled into ropes that will be braided. If you find that the dough springs back on itself as you try to roll it into your 24 inch strand, stop rolling and let the strand rest for 5 minutes (covered with your damp tea towel). Some people colour the raw eggs and then place them, still raw, into the wreath allowing them to cook as the bread bakes. I prefer to soft boil them (and dye them) first because I find it gives better results.
