  • dried fruits such as raisins (optional). For extra effect, these dried fruits can be soaked for half an hour in the above brandy.

How to choose fruits for fruit salad

You can use whatever fruit you have on hand, it is ideal to have a combination of at least three. Usually, fruits are chosen that can complement each other both in texture and taste. Sweet fruits, such as bananas, grapes, cherries, are combined with citrus or other fruits that have a certain degree of acidity, to enhance their flavor. Along with these go more crunchy fruits, such as apples, for texture, or others with a distinct flavor, such as strawberries, pineapple, berries.

The simplest is to use seasonal fruits. Watermelon, in summer, strawberries, in late spring, etc. do you realise. But her husband went shopping and, seeing him, he was tempted. Fruit salad, how to prepare

  1. Peel an orange, separate the segments and peel off any white scraps. Cut the orange pieces (about 2 slices each) and remove any seeds. Put in a large bowl.
  2. Peel a banana and slice it into pieces so that they can be eaten all at once.
  3. Over the already cut fruit, I squeezed the juice from half an orange, taking care not to drop the seeds in the bowl. Orange juice will prevent the fruits from oxidizing and will keep them looking fresh and pleasant. As the basic juice of the salad, the juice from the pineapple compote and the lemon compote work just as well, if you prefer everything to be sour.
  4. Peel a squash, grate it and squeeze the juice. Cut the pineapple pulp into cubes to fit in a teaspoon and add over the rest of the cut fruit in a bowl.
  5. Peel a squash, grate it and slice it. The strawberries are peeled and sliced ​​in the same way as the kiwi fruit.
  6. Separate the pulp from the watermelon, slice, carefully remove the seeds and add over the rest of the fruit in the bowl.

  9. Let the salad cool for half an hour. During this time, the aromas of the fruit will befriend and settle.

Nothing is more wonderful on a hot sunny day than a cool and fragrant fruit salad! The simpler it is, the more delicious it is. If we add a globe of vanilla ice cream or a little whipped cream, it's a fabulous dessert. Along with fruit salad, wafers or crispy biscuits can be offered.


SUMMER FANTASY preparation

1. Rose jelly:

The rose petals are washed with cold water, then placed in a bowl and covered completely with boiled water. Cover the bowl and leave to infuse, cold, until the next day (minimum 16 hours). If you used intensely colored and velvety roses, the water in which the roses were infused will have a beautiful color. If you have obtained a very light color, remedy the situation with a few pieces of beetroot.

After removing the bowl of roses from the refrigerator, sift through its contents. If you do not get a beautiful color, now is the time to grate a few pieces of beets in rose water, stirring constantly and wait a few minutes.

While the beets are in the rose water, put 3 sheets of gelatin in cold water.

After 10-15 minutes, strain the liquid in which the beetroot was bred. I obtained immediately after the infusion of the petals an intensely colored liquid and that is why it was not necessary to add red beets.

After straining the liquid in which the roses were infused, 225 ml of liquid remained. I added 4 teaspoons of sugar and the juice of ½ lemon and I put the composition in a pan, over low heat, stirring constantly, until the sugar melted. Then turn off the stove and when this liquid is just a little warm, add the gelatin sheets drained from the water and mix until they dissolve in the liquid, then you can pour into molds and cool in the refrigerator until folds and can be removed from the forms.

2. Pomegranate perfect:

Put the rings for the parfait shapes in the freezer, in a tray lined with food foil. I put parchment paper inside the rings because I didn't have acetate foil. These are necessary to easily remove the parfait from the rings, after cooling and to obtain beautiful and intact shapes. The whipped cream is mixed very well and put in the fridge. The egg is mixed until an aerated foam is obtained.

3. Put 2 sheets of gelatin in a bowl and cover with cold water.

I squeezed the pomegranate seeds with the help of the vegetable and fruit press.

4. Put in a saucepan, over low heat, the pomegranate juice, butter and sugar and mix continuously. When the sugar has melted, take the bowl off the heat, leave it to cool a bit, then pour the contents of the bowl over the mixed egg and incorporate the two compositions. When a homogeneous mixture has been obtained, put it back on low heat for another 2 minutes, during which time the mixing continues.

Turn off the heat, let the composition cool and when it is just a little warm, add gelatin well drained of water. The obtained composite is cooled in a bain-marie, keeping the vessel in cold water and stirring continuously.

When it starts to bind, add the previously mixed whipped cream and mix until incorporated. If you are not satisfied with the color you have reached after this operation, you can add a little natural food coloring.

Pour the composition into molds and let it cool until it coagulates.

5. Cookies:

Mix the butter and sugar until a creamy composition is obtained and the sugar has melted. Then add the egg and lemon juice.

After that we put the white flour together with the almond flour, the starch and the salt, kneading until we obtain a fine dough that can be detached quite easily from the hands. If this composition is still sticky, you can add very little flour.

Gather the dough into a rectangle and place in cold food foil for 30 minutes.

After 30 minutes, take the dough out of the fridge, remove the foil, place it on the work surface sprinkled with flour and spread a 3 mm thick sheet with a rolling pin and cut shapes with the help of a cutter. I got 12 cookies.

6. Put the cut shapes in the tray lined with baking paper and bake for 10 minutes in the preheated oven at 180 degrees. I don't have the option to measure the temperature in the oven and I baked them at the lowest stage until they started to change color a little on the edges.

Remove the cookies from the pan and place them on a grill to cool.

Pomegranate sauce:

Put the pomegranate seeds in a saucepan over low heat together with the sugar, water and lemon juice and mix gently. Bring to the boil for 12 minutes, then remove from the heat and pass through a fruit press, resulting in a thicker liquid.

Lemon sauce:

Mix the yolk with the whipped cream, powdered sugar and lemon juice, then add the grated lemon peel.

Preparation of crystallized rose petals:

Take a few rose petals, grease them with egg white and then sprinkle with caster sugar and let the egg whites dry.

After all the necessary items for the dessert have been prepared, it is mounted on the plate.

It is a cool, fragrant dessert, with a combination of textures and lots of color!


Winter Fantasy Cake

Ingredient:

for countertop: 8 eggs, 2 cups sugar, 2 cups flour, 1 rum essence, 1 sachet of vanilla sugar, 1 pinch of salt, 8 tablespoons oil, 4 tablespoons water and a teaspoon of vinegar
for cream: an envelope of Dr. Oetker cake cream with truffles and an envelope of Dr. Oetker cake cream with vanilla, 500 ml milk and 8 tablespoons powdered sugar
for garnish: a sachet of Dr. Oetker cream, 150 ml milk, kiwi, pineapple compote, strawberries, 1 milk chocolate for shaving

Preparation: 30 min
Separate the egg whites from the yolks. Beat the egg whites with the sugar and mix the yolks with the rum essence, vanilla sugar, oil. water and vinegar (add vinegar to make the top fluffy). Then mix the egg whites and yolks in a larger bowl and finally add the flour, being careful not to make lumps. The dough obtained is baked in a tray greased with oil and lined with flour, straight or round tray, depending on how you want the cake to be or not to stick, grease the tray with oil, put aluminum foil, grease the foil with a little oil and pour the composition.

Baking: 30-40 min
Bake on low heat until thick and lightly browned, then increase the heat to get that slightly copper color. Check with a toothpick from time to time and it is ready when you remove the clean toothpick from the counter. After baking, leave to cool and prepare the cream.

Cream: beat each sachet of cream with 250 ml of milk and 4 tablespoons of powdered sugar and leave to cool (follow the instructions on the sachet).

Assembly: Prepare the whipped cream as written on the envelope and leave it to cool. Cut the top into 3 parts, place the bottom on a plate or tray and syrup with half the amount of syrup in the pineapple compote. Put the truffle cream, then the top 2 which is syruped with the other part of the compote syrup and the vanilla cream after which the top 3 is added. dressed in a white cream coat. Place the sliced ​​fruit on top as you wish and grate the chocolate all over the cake as if it were snowing with chocolate snow. Leave it in the fridge for about 2-3 hours before consuming.
