Quinoa Fritters with Ají Amarillo Aioli


Ingredients

Aioli

  • 2 tablespoons fresh lime juice
  • 2 tablespoons (or more) ají amarillo chile paste or other chile paste
  • 1 tablespoon minced flat-leaf parsley

Fritters

  • 2/3 cup quinoa, rinsed, drained
  • 1/4 cup all-purpose flour
  • 1/4 cup finely crumbled Cotija cheese or feta
  • 3/4 teaspoons kosher salt
  • Freshly ground black pepper
  • 4 scallions, white and pale-green parts only, minced (about 1/3 cup)
  • 1/4 cup chopped flat-leaf parsley
  • Vegetable or grapeseed oil (for frying)

Recipe Preparation

Aioli

  • Whisk mayonnaise, lime juice, 2 Tbsp. chile paste, parsley, and salt in a medium bowl. Season to taste with more chile paste, if desired. Cover and chill. DO AHEAD: Aioli can be made 1 day ahead. Keep chilled.

Fritters

  • Heat a dry medium saucepan over high heat. Add quinoa; cook, stirring constantly, until toasted and golden brown, about 5 minutes. Add 1 1/3 cups water; bring to a boil. Reduce to a simmer, cover, and cook until quinoa is tender and water is absorbed, 11–12 minutes. Remove from heat and let stand, covered, for 15 minutes. Uncover and let cool. Transfer to a large bowl.

  • Add flour, cheese, and salt to quinoa; toss to coat. Season with pepper. Add scallions, parsley, egg, and egg yolk. Stir until a dough forms (mix gently to prevent quinoa from breaking apart).

  • Scoop up some dough with a soup spoon; use a second spoon to scoop dough out of first spoon, smoothing and forming dough into an oval shape. Repeat until a football-like shape forms (in kitchen speak, what you've just made is called a quenelle). Alternatively, scoop out dough with a small ice cream scoop. Place quenelles on a large plate or baking sheet and repeat with remaining dough.

  • Pour oil into a large heavy skillet to a depth of 1/2-inch. Heat oil over medium-high heat. Working in batches, place quenelles in oil and fry, turning occasionally, until cooked through and all sides are golden, 4–5 minutes. Using a slotted spoon, transfer fritters to paper towels to drain.

  • Serve fritters warm with ají amarillo aioli alongside for dipping.

Aji Verde (Spicy Peruvian Green Sauce)

Meet my new favorite hot sauce! Aji verde is a bold and bright Peruvian green sauce. It’s spicy and tangy, and packed with fresh flavor.

We’ve been dousing just about everything in aji verde since I found it—tacos, eggs, rice and beans, potatoes and more. A drizzle of aji verde makes the most basic of foods taste irresistible.

I discovered aji verde not at a Peruvian restaurant, but at the Avanti food hall in Denver a few weekends ago. Have you been to a modern-day food hall yet? I’m like a kid in a candy store, since I can taste so many concepts from so many restaurants.

I walked up to The Rotary and ordered a couple of vegetable sides, plus all three of their sauces to sample. You know I can’t resist a good sauce.

We each took a bite of their grilled broccolini, which was doused in aji verde. Our eyes lit up and I vowed not to leave without the recipe. Today, I’m sharing the recipe with you!

Applications

Aji Amarillo chile peppers are best suited for both raw and cooked applications such as roasting, simmering, boiling, grilling, and stuffing. When raw, the peppers can be chopped and added to salsas, sliced and tossed into salads, or blended into hot sauces and pastes. The peppers can also be utilized in cooked applications such as deep-frying, stuffing with cheese, rice, and meats, or slicing and mixing into soups and stews. When the peppers are cooked, the skin turns a golden yellow, and many experts believe that this cooked color is where the pepper initially got its name. Aji Amarillo chile peppers can also be dried and are primarily sprinkled into rice, or they can be canned for extended use. Aji Amarillo chile peppers pair well with meats such as fish, poultry, beef, and pork, beans, potatoes, rice, goat cheese, and mango. The peppers will keep 1-2 weeks when stored whole and unwashed in the refrigerator.

For many Peruvians, there is no Christmas without panetón (this is the local Spanish pronunciation of panettone, a northern Italian sweet bread studded with dried and candied fruit). In Peru, it also includes candied papaya. The reason why this Italian baked good ended up so firmly embedded in Peruvian culture is the same reason why we ended up with dishes like tallarines verdes and sopa seca. Peru is home to a significant Italian immigrant population, which has greatly influenced the local cuisine, particularly around Christmas.

In my family, we often varied what we had for dinner on Christmas Eve, and I grew up not really knowing what a traditional Peruvian Christmas looked like. My dad, who always tried to infuse every occasion with some Peruvian flavor, fell in love with American-style roast beef and ended up making that every Dec. 24. He never faltered, however, from serving the most traditional Peruvian Christmas element for dessert: panetón and hot chocolate. It was easy to include panetón on the Christmas Eve table as it’s something you buy rather than make yourself. Considering that my dad never really learned to cook Peruvian food, this was a saving grace.
