Turkey soup


I bought a turkey about 8 kg grown in the country.
I thought that a soup is welcome and you should know that I was very right.
For the soup I used a pulp, which after I boiled I took it out and used it in a vegetable salad.
The result was a very tasty, yellow and fatty soup.

RECIPE PREPARATION Turkey soup:

Wash the meat and boil it in cold salted water (I cut the pulp into two pieces).
When it starts to boil, turn the heat to low and froth well.
#We don't throw away the first water ... this way the soup doesn't lose its flavor, its taste.
Add the peppercorns and cook.
While the soup is boiling, we take care of the vegetables ...... we wash it, we clean it.
When the meat is half cooked, add the vegetables ... whole onion, carrot, parsnip and celery cut into sticks.
Season to taste with salt and dried hot peppers, finely chopped.
Leave on the right heat until everything is well cooked.
#Foam whenever needed and if necessary wipe the edges of the pot with a damp kitchen towel.
I strained the soup.
Place a strainer on top of an empty pot (possibly lined with gauze). The soup remains in the pot and the meat and vegetables in the strainer.
I used the meat as I said above for a salad and the vegetables can be added to the soup again.

We put the soup on the fire again and bring it to a boil.
Separately boil the noodles according to the instructions on the box.
When they are ready, we strain them and pass them under a stream of cold water.
Add the boiled noodles to the soup and serve hot with the vegetables (I only added the carrot) and season with chopped green parsley.

Dumpling soup is one of the dishes that my grandmother used to make for us every summer vacation, when we had more time to spend with her. It will always be one of my favorites, regardless of the meat with which it is prepared.

This time I have those turkey wings because they look great in the refrigerator of the store and, fortunately, it was fresh.

Ingredients soup with turkey wings and dumplings with semolina

  • a turkey wing (2 if you want more soup)
  • 2 large carrots or 3 suitable carrots
  • a parsley root
  • 3-4 slices of gulia
  • peppercorns
  • parsley greens
  • a medium egg
  • 4 tablespoons semolina
  • salt to taste

Method of preparation

Wash the meat well and boil it in salted water and peppercorns. If necessary, remove the foam that is made to get a clearer soup at the end.
In the meantime, you can peel the vegetables and cut them into larger pieces & # 8211 as seen in the pictures.

After the meat has frothed, you can add the vegetables to the soup, along with half the parsley greens.
When the soup is ready, strain it and put it back on the fire so that the dumplings can be added.

For semolina dumplings we need a bolus in which to break the egg, season it and then beat it with a fork. We will gradually add the semolina until everything is incorporated. If the mixture is too soft, you can add a little semolina flour or white flour.

When the turkey soup boils, we can start adding the dumplings using a regular spoon. Before cutting a piece of semolina, soak the spoon in the hot soup, cut it into thin slices with it and then add it quickly to the soup. If you are not fast enough you will risk sticking the dough to the teaspoon.

When all the dumplings have been added, let the soup boil for another 13-15 minutes, so that the dumplings can boil inside as well.

-500 gr plain biscuits, 300 gr nutella, 400 gr cream (fat), 250 gr mascarpone, 1 tablespoon boiled coffee, 3 tablespoons milk, 1 tablespoon honey
-in a bowl beat the cream until it hardens then add mascarpone + 1 tablespoon coffee + honey and mix well then put 1-2 tablespoons of nutella and mix to be a thick and fluffy cream
-we prepare a coffee with milk in a bowl (in which we will soak the biscuits)
-we prepare a round cake tray (with ring)
-go a biscuit with a spoonful of nutella over which we put a spoonful of cream, then the second biscuit press a little, but quickly through the latte and place in the tray
-place the wheel until we cover the whole tray
-if there is an empty place, put a piece of biscuit
-after filling the form, pour the remaining cream over it and put the cake in the cold
-cut strips of paper how wide you want and how many stripes you want on the cake
