Wheat:

Method of preparation

For the garnish I used HuLaLa whipped cream 500ml which I mixed with 3 tablespoons of sugar, and as a dye I used beetroot, until I got the pink color.

Bake the cake top at 180 degrees for 30-35 minutes, or until it passes the toothpick test.

Prepare syrup

Heat the cherry jam in a bain marie, then pour into a sieve and add 250 ml of warm water over the cherries, so that all the syrup drains well.
It should be mentioned that I used cherry jam from a jar with a capacity of 720 ml.
Taste the syrup and add or not sugar. I added another spoon.

Prepare the cream

Mix the yolks with a pinch of salt to intensify their color, then add the sugar and mix well until it foams.
Dissolve the ness in warm milk, then add it over the yolk cream and mix well.
Boil the yolk cream on a steam bath, or over low heat, stirring constantly until it thickens like a pudding, then let it cool.
We must be patient until the cream thickens well on the fire, 15-20 minutes, otherwise we risk a soft cream.
When it is completely cooled, we mix it together with the mascarpone.

Mady Cake Assembly

Cool the cake top, cut it in half and syrup both sections.
We place on the plate first the top that comes out more uneven due to the walnut kernel in the composition and we syrup it, pouring more syrup on the edges.
Spread the ness cream and place over it the second section of countertop, slightly syrupy.
Put the cake ring over the assembled cake and wrap it around it, then put the cake in the fridge for 30 minutes.

In the meantime, we make coffee. I used 3 teaspoons of coffee, one more teaspoon of sugar and 300 ml of water.
Over the cooled coffee, add the coconut liqueur and pass the biscuits through this syrup for a few seconds, no more, so that they are not too syrupy and break, or spoil their appearance too much.

Prepare the glaze

heat the liquid cream and melt in it, chocolate broken into pieces.

Careful! We don't have to boil the whipped cream, that is, it shouldn't boil, just enough for the chocolate to melt, stirring it intensely.

Pour the hot icing over the cake and let it drip over the sides, as she wants.
Place the biscuits on top, so that each portion of the cake contains a biscuit.
We glaze them lightly with a little chocolate cream, we make sure to stop for them as well, then we place the drained cherries in the middle, so that they look beautiful.

Then decorate the cake with a little grated chocolate, white and bitter, cover it with a lid and put it in the fridge for at least an hour before serving.

Mady Cake Tips

Ness cream does not require gelatin, unless you want to be very firm and cut a perfect section. I kind of avoid gelatin as much as I can.

The cherries used must not necessarily be from jam but also from the freezer or compote. I make a lot of jam, especially for desserts, but I make sure to leave it smoother.

I added the breadcrumbs to spread the finely ground walnuts, otherwise they remain heavier and the cake top is left.

Cream ingredients

  • 5 eggs

Method of preparation

You can start by preparing the cream. Meanwhile, the gelatin is hydrated with 5 tablespoons of compote juice and made up to 120 ml of liquid. Put the eggs in a saucepan and mix with the sugar over low heat continuously, to avoid sticking the composition to the bottom of the bowl. Stir in the cream until it starts to thicken, but it should not start to boil. Remove the pan from the heat and allow to cool.

Meanwhile, the hydrated gelatin is added over the hot cream and stirred until dissolved. Add the candied and fresh fruits and mix gently until the composition is well blended.

While the cream is left to cool well, whip the cream. It must be very cold and beat until it hardens, but not more than that so as not to cut the composition.

Add ⅓ of the whipped cream to the egg and fruit cream and mix well. Put a layer of biscuits in a tray with detachable edges that you have previously soaked in the compote juice. Pour the fruit cream and cream over the counter and level the cream well.

Add a second layer of well-syrupy biscuits and put everything in the fridge for at least 5 hours or, if possible, overnight. Subsequently, when the cake form dissolves, the cream must be well hardened.
