Fresh apple cake

Melt the butter in a bowl, let it cool and add lightly beaten eggs and milk.

Put flour mixed with 3 tablespoons sugar, baking powder and salt in a bowl.

Start gradually adding the egg butter, mixing. When it has thickened so that you can no longer mix with a spoon, knead by hand for a few minutes.

Divide the dough into four equal parts, form four balls, cover the bowl and let cool for an hour. Meanwhile, prepare the filling.

Wash the apples well and peel them. Put them on the large mesh grater.

In a bowl caramelize 5 tablespoons sugar. When it has turned amber, add the butter, mix well and put the grated apples.

Leave everything on the fire for 5 minutes, stirring.

Turn off the heat and add a tablespoon of vanilla extract, honey, cinnamon and star anise (the latter is optional)

Remove the dough from the cold.

Drizzle the worktop, take a ball of dough and spread it with the rolling pin in a rectangular sheet of 20/32 cm. Bake the sheet on the back of a tray, greased with butter, in the preheated oven, over medium heat, for 8-10 minutes . It should start to take on color on the sides.

Do the same with the rest of the dough balls.

Divide the apple filling into three equal parts.

Place one of the sheets on a plate, spread one third of the filling, place the second sheet, spread another third of the apple filling, place the third sheet, spread the rest of the filling, place the last sheet and powder with powdered sugar.

Leave the cake at room temperature for a few hours then portion. The more you leave it, the better.
