Stuffed Heirloom Cherry Tomatoes

pint heirloom cherry tomatoes (about 45 count)
oz panela cheese, cubed into 1/2-inch pieces
teaspoon dried oregano crushed
teaspoon fresh cracked pepper
Slice cherry tomatoes in half and scoop out the flesh with a melon baller.
Insert a piece of cheese in each tomato half and place in a serving platter.
In a small bowl, combine oil, vinegar, oregano, salt and pepper. Whisk until combined. With a small spoon or pastry brush, dab vinaigrette on each stuffed cherry tomato before serving.
- Add chopped Serrano chile to the vinaigrette for a spicy kick.
