Some time ago, a blog reader, Rosita intrigued me by telling me about the Zebra cake or zebra cake. As curious as I am, I could not help but read up on this cake that I did not know existed. How to make the Zebra Cake

In a bowl, whisk the eggs with the sugar until the mixture is smooth and fluffy.

Add the milk and oil slowly and continue to whisk the dough with the electric whisk.

In a separate bowl, mix the flour, vanilla and baking powder, add everything to the dough and knead until the dough is smooth and fluid.

Then divide the dough into two parts: leave it in the white part, add 2 tablespoons of flour, in the other the cocoa and mix.

Turn on the oven to 180 ° C and grease and flour a 24 cm cake pan.
Pour 3 tablespoons of white dough into the center of the pan. Then pour, again in the center of the pan, 3 tablespoons of black dough on the white one.

Continue like this, alternating the doughs until they are finished.
I recommend ... do not stop to wait for the mixture to expand and do not tilt the pan to distribute the dough ... it will extend by itself forming concentric circles.

Bake the zebra cake for 40 minutes at 180 ° C in a preheated static oven.

Let cool, cut into slices and serve.

There is no need to spread them out, they will distribute themselves one after the other, creating concentric white and brown circles.

Heat the oven in static mode to 160 ° C and bake the cake for 50-60 minutes. Let it cool and then put it in the refrigerator for 5-6 hours before serving, accompanying it if you want with blueberry jam or wild berries.

Zebra Cake - Recipes

This cake was made on a night when Marcy was at work and I wasn't sure what to do. Knowing that my granddaughters would come to see me the next day, I thought I'd make a nice cake for them! Ingrediants:
150 gr of butter at room temperature
300 grams of Molino Chiavazza 00 flour
140 grams of starch
220 grams of sugar
4 eggs
30 grams of cocoa powder
120 ml of milk + what is needed for adjustments
1 sachet of yeast

  1. Work the butter into a cream with the sugar, then add the eggs one at a time, mixing well.
  2. Add the flour, 100 grams of starch, and the yeast. Also add 120 ml of milk to make the mixture become a little more liquid.
  3. Now divide the mixture into two bowls: in one put the remaining 40 grams of starch, in the other the cocoa, so as to have a white and a brown mixture. Adjust with a little milk if they seem too thick, however both compounds must have the same consistency.
  4. Take a 24 cm opening pan (I covered the bottom with parchment paper, inserting it in the hinge, while the rest is not) and start pouring two tablespoons of white mixture into it.
  5. In the center of this circle put a spoonful of brown mixture, then again a white one, and so on until the end of the dough.
