  • 1 cup oil
  • 1 cup milk
  • 1 cup sugar
  • 1 can of blueberries
  • 2 dogs flour
  • 1 tablespoon baked powder
  • 1 teaspoon free of rum

Servings: 12

Preparation time: less than 30 minutes

RECIPE PREPARATION Blueberry muffins:

Mix the milk, oil, sugar and essence in a bowl.

Add the egg, then the flour and baking powder.

Homogenize and add the blueberries. We keep a few aside.

We fill the muffin sheets with about three quarters.

Put a few blueberries on top and optionally you can sprinkle a little caster sugar.

Bake until lightly browned.

These muffins are very easy to make. We will put all the dry ingredients in a bowl, these being flour, sugar, baking powder and baking soda. In another bowl we will mix the other egg ingredients, with butter, milk and vanilla essence we will mix them easily. .

Combine the two compositions and mix well until you get a homogeneous paste. I always use baking trays for muffins that I place nicely in the tray. With a spoon we place the composition in each form over which we add a teaspoon of blueberries and over the blueberries we add again a spoonful of composition, we do not fill the form but we leave it 3/4 on top, we press a few more blueberries.

Put in the preheated oven over medium to low heat, approx. 15-20 minutes depending on the oven. They will swell and turn a little golden when ready.
They are very delicious.
Good appetite!

How do we make the best and fluffiest muffins?

For the cocoa muffin recipe, I obviously chose to use cocoa, a fairly large amount. Cocoa is very easy to find on the market, is of good quality and is much easier to work with. For butter, I reduced its amount and used a new technique for muffins, that of incorporating cold butter into dry ingredients and the subsequent addition of liquid ingredients, eggs, and yogurt. You can use the yogurt you want, either fatter or leaner, and if necessary you can also put sour cream. Remember that in addition to butter, the rest of the ingredients must be at room temperature.

After you have made the composition for these cocoa muffins, check that they have the consistency of the clip. If you think it is more liquid, add one or two tablespoons of flour. Then put it in the muffin tray in which you put papers. As I told you, we served the muffins with homemade strawberry jam. Cocoa muffins can be served hot or cold, glazed, filled or served as such, along with a coffee or a glass of milk. You can also try my recipe muffins with chocolate flakes or blueberry muffins.
