Cherry Pomegranate Mojito

I've been to Cuba Libre twice now, and haven't gotten to try a pomegranate mojito, because I was pregnant both times I went. I finally decided to make one at home. I was actually going to make you a strawberrypomegranate mojito cocktail. But a certain toddler ate all my strawberries.

So, I improvised with some cherries that had somehow not been eaten within two hours after their purchase. I think it's because we also had some mangoes in the fridge. One fruit that boy loves more than cherries is mangoes.

Anyway, this is still a really refreshing cocktail, which is easily adaptable to your taste. Want a stronger rum taste? Add more. Prefer a less-strong drink with more fruit flavor? Add more pomegranate juice.

The cherries and pomegranate juice turn the drink a beautiful shade of pinkish red, and the green of the mint leaves provides a nice color contrast.

This recipe makes four small drinks, which is perfect for an intimate get-together. It's also a really pretty drink to serve to guests. Enjoy!

Last week I had the pleasure of traveling to Nashville to attend a Southern Baking Retreat hosted by White Lily Flour. I & # 8217ve never been to Nashville and heard what a great city it was and was so excited to go. The food, people and hospitality did not let me down. That southern hospitality definitely exists! With the ma & # 8217ams and yes ma & # 8217am and the terms of endearment like darlin & # 8217 and sugar and y & # 8217all instead of you guys. . I knew I was in Nashville, Tennessee!

On the last day, I was heading down to the elevator to check out of the hotel and the elevator door opened and I got on. Immediately, this little, old man with white hair, dressed in shorts with a pastel colored oxford button up shirt tucked in with a belt and a sweater draped over his shoulders says to me, & # 8220Well, good God Almighty! Dang gummit. Where are YOU headed? What floor do you need. & # 8221 in the thickest southern accent ever. . and he & # 8217s huffing and puffing (he was really angry you guys). . and I looked at him and said, & # 8220Excuse me, sir? & # 8221 I couldn & # 8217t believe he had just said all that to me. . it was like a scene from a movie. Then, he says to me, & # 8220Well, I & # 8217m sorry ma & # 8217am. . I have been going up and down in this elevator and this hot coffee just spilled all over my hands. & # 8221 He was carrying pastries and some coffees in his hands. We get down to the lobby level and he gets off (first) and immediately goes to the front desk to complain. Not really sure what you complain about because he obviously got on the wrong elevator and that was it. The elevators were working just fine.

As he was scooting off the elevators, I see his shorts kinda riding up in the middle because maybe the shorts are too small or his thighs too big. . but it dawns on me that I had just met Beverly Leslie, the character from Will and Grace. That TV show with Eric McCormack and Debra Messing, from the late 90 & # 8217s.

Does anyone remember this show? or this character ?! The guy in the elevator was totally him. Southern drawl and all.

Well, I know this man was holding coffee. . but he should have been reaching for a blueberry cherry mojito. He certainly needed some loosening up.

It & # 8217s August and we are soaking up every last bit of summer. I don & # 8217t know about you but I still have my refrigerator packed with berries and cherries. I borrowed a muddler from my friend, Rina, and mixed up one of my favorites with a twist!

Cherry faux-ito

I took a little break this weekend from the world of technology. No posts, a handful of tweets and instagrams and didn't even open my computer for a solid 48 hours.

Judging by the whole 5 of you that were actually on this thing the past 2 days, so did most people.

I haven & rsquot had the & ldquoI think we need a break & rdquo conversation since my college days (it obviously didn't last long considering we & rsquore now married) and it felt good.

Like I got to call the shots against technology for once.

I got my devious ways all out of my system with some girl time over wine, a hungover breakfast, a 4 hour motorcycle ride, some soft serve with rainbow sprinkles and these virgin cherry mojitos.

Mojitos minus the rum, plus cherries.

I am in no way trying to hold you back from adding the rum (it would be delicious), I just wasn't feeling it at the moment (no, mom & friends, I'm not pregnant. Please see above wine & hangover reference).

It & rsquos supposed to be record breaking temperatures here today and it & rsquos a Monday without work. Why not kick back and take one more day off with these?

How to make a Cherry Mojito

Especially when you remix untouchable classics like the Mojito.

‘Who do you think you are !?’ they said. ‘You can’t remix a Mojito!’ They said.

Obviously, being the absolute renegades we are, we laughed in their smug faces, added a load of cherry and mixed it to perfection.

And just to add insult to injury, we swapped the glass for a plastic bag. Because rules are for losers, and this cocktail is for winners.

Wanna join the rebellion? Here’s the Cherry Mojito recipe you need to know about to join the rule breakers club!

Cocktail bag (or a glass, if you want to be boring)

Cherry Mojito Ingredients:

  1. First put your caster sugar into the cocktail bag.
  2. Add the rum and lime juice.
  3. Next up, add a load of crushed ice.
  4. Then, pour over the cherry syrup.
  5. Get the mint leaves and place them in the palm of your hand then clap your hands together to get those minty oils flowing.
  6. Drop the leaves into the bag and give it all a good stir with a large spoon.
  7. Top up with soda water and apple juice, add a straw and tie up the neck of the bag, leaving the straw hanging out.

Now that’s what totally breaking the rules tastes like.

Sometimes it’s good to be bad, right?

Check out these other wild remixes we & # 8217ve had no shame in inventing, or book in to a cocktail class for some tips from the experts.

The Tart Cherry Mint Mojito

We & # 8217re gonna start by making a juicy muddled paste of sugar, mint, tart cherries and a wedge of lime in our heavy duty glass or mason jar. Just muddle the heck out of everything until it looks like a crime scene in a glass.

Next, add in a generous dose of rum, fill your glass with ice, and top up with a splash of club soda. Garnish with a sprig of mint and a few cherries and you & # 8217re done!

Now, a word of warning. This cocktail is very, very easy to drink. Too easy to drink, probably. It & # 8217s refreshing, well balanced, and will make you feel like it & # 8217s summer even if the snow is still falling. Just, be sensitive.

Fresh Cherry Mojitos

Right when I saw these beautiful early summer cherries at my local farm stand last week, I knew exactly what I wanted to do with them.

And that was add rum. And sugar. And lime juice and mint! Amen.

Ever since I tried a fresh blackberry margarita at a little bar in San Francisco last month, I knew I had to recreate something like it for the blog. Mojitos remind me of home and all the delicious Cuban food that was all over the place there. I used to love a restaurant in Tampa that made table-side mojitos and then garnished them with a fat stick of fresh sugarcane. Couple that with some mojo pork, sweet fried plantains and black beans and rice and I was happy as a clam.

If you can't find cherries yet where you are, you can use frozen bing cherries for this recipe. Just defrost them and roughly chop them up. I & # 8217ll admit, pitting cherries can be a bit of pain but this cocktail is definitely worth it.

Oh! and if rum isn & # 8217t your thing, then you should make it then you can use this cherry syrup in vodka or tequila. Or, make a & # 8220mocktail & # 8221 with fresh cherry syrup and sparkling water. I think that would be fun for a spring baby shower, don & # 8217t you ?!

YUM. These made me think of cherry limeade, which made me think of junior year, which made me think of the amazing blue prom dress my mom picked out for me that made me feel like a princess! Oooooooh awkward slow songs by Usher.

ENJOY THESE. I think they & # 8217d be a huge hit at a Memorial Day bash & # 8230or maybe just at 5pm today. Whatev.

Warning: they go down way too fast. Not that I & # 8217d know from experience or anything & # 8230 & # 8230 & # 8230.

Fresh Cherry Mojitos

Ingredients:

1 lb sweet cherries, pitted and roughly chopped

1 tbsp minced fresh mint (each glass)

1/4 cup cherry syrup (each glass)

8 oz sparkling water each

Combine the sugar and water in a small saucepot on the stove. Bring to a boil and stir so that all the sugar dissolves. Remove from heat and add fresh, chopped cherries. Stir and refrigerate for about 2 hours, or until chilled. You can make this cherry syrup ahead of time and keep covered in the fridge.

When you're ready to make your mojitos, drop a tablespoon of fresh minced mint in each glass, followed by 1/4 cup of cherry syrup and juice of 1 lime. Using the end of a wooden spoon (or whatever you have!) Muddle the mixture together. The, add 2 oz rum and about a cup of sparkling water. Add ice! Serve with additional mint and cherries.
