Eclairs with vanilla cream
Preparation of eclairs : In a saucepan over low heat, put the water together with the oil, sugar and a pinch of salt. When it starts to boil, add the flour and mix continuously with a wooden spoon until the dough comes off the bowl, then turn off the heat. Leave to cool until it reaches room temperature, then add eggs one at a time and mix well. In a tray put baking paper and with the help of pos (or a bag cut at a corner) form eclere shells. Put the tray in the preheated oven, on the right heat for about 30 minutes. When they are ready, take them out of the tray and leave them to cool.
Preparation of vanilla cream : In a saucepan put the milk to boil. Mix the eggs with the sugar and flour until smooth. When the milk boils, add the formed composition and mix continuously until the cream thickens. When it is ready, turn off the heat, add the essence. vanilla, mix well and leave to cool.
Preparation of chocolate icing : Break the chocolate into small pieces and put the oil in a bain-marie bowl. Mix well until melted. (the glaze is prepared when the eclairs are already formed)
The cold shells of eclairs are cut in half and filled with vanilla cream. Put the chocolate icing on top.
