We prepare the coffee and sweeten it to taste.

While the coffee cools, prepare the cream.

The mascarpone at room temperature is mixed with powdered sugar.

We leave it aside, and we start to mix the egg whites with the salt.

When they have hardened, add the sugar little by little.

We will get a glossy foam, like meringue.

Gradually add the meringue over the mascarpone and mix lightly, from the bottom up with a spatula.

At the end we add the rum essence.

We prepare a tray, and start assembling the tiramisu.

Soak each biscuit in coffee and place so that it covers the entire bottom of the pot.

The cream is divided into 2, the first part is placed over the layer of biscuits soaked in coffee, then we continue with the second layer of soaked biscuits and on top we place the remaining cream.

Decorate with cocoa and grated chocolate.

Let it cool overnight.
