This cocktail from Ava Gene's, Portland, Oregon, uses fino Sherry, which tends to be light, yeasty, and dry.
- 1 oz. fresh grapefruit juice
Combine Aperol, Sherry, grapefruit juice, lemon juice, and honey simple syrup (shake 3 Tbsp. honey with 1 Tbsp. hot water; chill) in a cocktail shaker. Fill with ice, cover, and shake until outside of shaker is frosty, about 30 seconds. Strain into a coupe glass.
