Raspberry ice cream dessert
We wash the raspberries, it's easy not to break it, we let it drain a little. We stop a few beans to put them whole in ice cream.
Over the raspberries, put two tablespoons of sugar, put it in the fridge for 2-3 hours.
After this time, take the raspberries out of the fridge, pass it through the blender.
We pass the puree through the sieve, we throw the seeds that remain in the sieve.
Mix the yolk with the other two tablespoons of sugar, add the milk.
Mix everything well, then pour this mixture into a stainless steel bowl, transfer it to the steam bath. We spin until the sugar is completely melted. We take it off the fire, let it cool.
We mix the cold cream until it becomes foam.
Add the yolk mixture with milk and mix for a few more seconds.
Put the vanilla, the raspberry puree passed through a sieve, turn with a spatula.
At the end, we incorporate the stopped raspberries and chunks of chocolate sticks.
Put the composite obtained in ramekin dishes (or you can use a casserole, a larger bowl), cover them and put the ice cream in the freezer for 5-6 hours or even overnight.
We take it out of the freezer 10 minutes before serving.
