Put the broccoli and water in a microwave-safe bowl. Cover and microwave on high until tender, about 4 minutes. Drain well and set aside (be careful of the steam when uncovering the bowl).

Meanwhile, heat 1 teaspoon of the oil in a large, nonstick skillet over medium heat. Add the breadcrumbs and cook until lightly toasted, stirring often, about 2-3 minutes. Scrape the toasted breadcrumbs into a bowl. Stir in the lemon zest and 1/8 teaspoon of the salt.

Heat 1 more teaspoon of the oil in same skillet over medium-high heat. Add the shrimp and sauté until pink, about 2 minutes. Add the garlic and sauté until very light golden, about 1 minute.

Stir in the broth, red pepper flakes, and remaining salt. Cook just until the shrimp is cooked through, stirring to loosen bits from the bottom of the pan, about 1 minute.

Remove from heat and add the cooked broccoli. Toss to mix and coat. Add the lemon juice and remaining oil and toss again. Serve topped with the toasted breadcrumbs.

Spaghetti With Shrimp, Tomatoes & Breadcrumbs

Every Saturday we are lucky to have a local farmer’s market set up just a block away from our place here in Florida. Along with a number of stands overflowing with gloriously colored, just picked produce, the market has one stand that sells fresh seafood, most of it caught locally. Eight weeks today we head back to Umbria for six months, and since Umbria is one of the few landlocked regions in Italy, we usually do not get to enjoy fresh seafood as often as we do here in Florida, so we are enjoying it as much as we can. This past Saturday I asked the fish monger what she would suggest, and she showed me some beautiful fresh fish fillets. All the fish looked wonderful, but I ended up choosing a pound of the Florida Pinks, because I just cannot resist fresh shrimp, especialy local ones! The majority of shrimp harvested for food in Florida belong to the shrimp family Penaeidae. Pink shrimps are the most abundant shrimp species harvested in the state, and they can be found primarily in the area from west-central to southeast Florida. I was told the shrimp I bought came from the waters just off Fort Myers beach the day before.

Now that I had my seafood selection, the next decision was how to prepare the shrimp. My husband had requested pasta for dinner earlier so I decided to incorporate my gorgeous shrimp into a pasta dish. My shrimp were so pretty, that I didn’t want to cover up their flavor with a heavy sauce, so instead I simply tossed them with some chopped fresh tomatoes I cooked down, and then topped the completed pasta with coarse, garlicky breadcrumbs for added texture. I had a bowl of ripe plum tomatoes on hand so I cored them and cut them into quarters, but you could also use cherry tomatoes cut in half, or even canned chopped tomatoes if rispe fresh ones are not available.

The Skinny on Roasted Shrimp and Broccoli

We enjoyed this simple roasted shrimp and broccoli dish for dinner last night and decided it was so easy and delicious it should make a regular appearance in our dinner rotation.

Since the broccoli takes longer to cook, you want to give it a 15-minute head start before adding the shrimp to the pan.

I would use this roasted shrimp and recipe with the Weight Watchers Simply Filling Technique too. Would you?

According to my calculations, each serving has 234 calories and
3 *SmartPoints (Green plan)
2 *SmartPoints (Blue plan)
2 *SmartPoints (Purple plan)

Roasted Shrimp & Broccoli Recipe Variations:

No shrimp? Shrimp-size chunks of chicken would work

Different veg – asparagus, cauliflower, carrots, brussels sprouts, zucchini, etc. would be great, as would a combination

Different spices & seasonings – use what you like – basil, thyme, rosemary, garlic, ginger, cumin, smoked paprika, crushed red pepper flakes, soy sauce, dijon mustard, balsamic vinegar, etc.

How to make Air Fryer Garlic Parmesan Shrimp

This is one pound of jumbo shrimp that I peeled and deveined. One trick to making sure the egg and panko stick is patting the shrimp dry with paper towels.

My breading station is set up below as you can see.

One egg beaten in a bowl. And a mixture of panko bread crumbs, grated parmesan cheese, garlic powder, kosher salt, and pepper.

Dip each shrimp into the egg and then into the panko mixture. Pressing the panko into the shrimp helps it stick as well.

Also breading the shrimp quickly is a must because that panko mixture becomes real soggy, real fast.

Into the air fryer in a single layer they go, with a little spray of olive oil cooking spray over top.

Set the air fryer for 10 to 12 minutes at 400 degrees. Depending on how brown you like the panko and the size of the shrimp the cook time may vary a bit.

Peek at them at 10 minutes and let them go a little longer of needed.

I wish I was one of those people who just ate food the way it is, but no…nope, I need a sauce for just about everything.

So if you’re a saucy person like me just mix some ranch dressing with more parmesan cheese and garlic powder and dip away, my friends.

Recipe Summary

  • 2 heads broccoli, separated into florets
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 clove garlic, minced
  • ½ teaspoon lemon juice

Preheat the oven to 400 degrees F (200 degrees C).

In a large bowl, toss broccoli florets with the extra virgin olive oil, sea salt, pepper and garlic. Spread the broccoli out in an even layer on a baking sheet.

Bake in the preheated oven until florets are tender enough to pierce the stems with a fork, 15 to 20 minutes. Remove and transfer to a serving platter. Squeeze lemon juice liberally over the broccoli before serving for a refreshing, tangy finish.

This ain’t just any broccoli you know? It should also be known as: HOW TO GET YOUR VEGGIE HATERS TO EAT THEIR BROCCOLI!
Okay. Maybe that’s not always attainable, but still. We can try. It worked on my husband.

When preparing broccoli, I start with a game of eeny meeny miny mo because I can’t ever decide on these guys OR my other garlicky, yet buttery broccoli with bread crumbs… these are my life decisions…

Almost every single time I DO choose the buttery guys, but because of a cute, blonde, 4-year old, as of late, THIS broccoli recipe has been making its appearance repeatedly. But really, this was her lunch almost every single day last week. EVERY SINGLE DAY. I think it was the cheese that reeled her in.

One of the things that I find incredible is that this broccoli recipe is ready in under 10 minutes. Which means, like, you have no excuse not to eat your veggies, people!

Besides, when you add garlic and parmesan cheese and lemon juice to the mix? It doesn’t even taste like veggies! Granted, it doesn’t taste like a burger, either, but whatever. Life ain’t always fair. Balance is what we’re after. bla bla bla. I sound like Tony Robbins…

Go shave some parmesan, juice a lemon and get IT done!
