We start our apple pie, which is peeled and the back. Grease a form of yenna with a little butter and put the apples in the oven with the hole down, about 10 minutes. Then we turn them upside down and put them in the oven for another 5-7 minutes. We caramelize the sugar in the pan in which we will make the cake, and we grease the walls and the bottom of the pan well. Let cool until the apples are done. After they have softened slightly, place the apples in a pan with caramel and top them with a cube of butter (about half a teaspoon), a teaspoon of jam, half a walnut and a little chocolate and a pinch of cinnamon.

We start making the dough.

Rub the yolks with the 5 tablespoons of oil, like mayonnaise. Beat the 5 egg whites with a pinch of salt until they become a dense foam, then start pouring the sugar (1 cup of about 250 g) - a little at a time, until they form a strong meringue. Add the yolks and chew lightly, the essence and the orange peel, then add the flour (the same cup) and mix gently from the bottom up so that no air comes out of the dough.

Place the butter pieces in the stuffed apples, then pour the dough obtained and bake for about 40 minutes, until lightly browned. with cinnamon. Let it cool well, then garnish it with plenty of whipped cream.

I made from seeds (sesame, flax, sunflower and pumpkin) and almonds, bitter with caramelized sugar, some candies, which I put from place to place and filled with white and dark chocolate sticks.

Ingredient:
For the countertop we need:

  • 6 eggs
  • 6 tablespoons caster sugar (about 90g)
  • 6 tablespoons flour (about 60g)
  • 8 tablespoons water (about 100ml)
  • 100ml water
  • 100g old cough
  • 1 ampoule of rum essence (you can also use cognac or rum for flavor)
  • whipped cream (about 400g)
  • cake ornaments (I used some marzipan apples made by my little girl)

Optional : cherries from jam

Method of preparation:

Step 1:

Peel the apples, remove the stem (seeds) and then put them in a pan with boiling water in which we put a little salt and keep them on the fire for about 4-5 minutes, 2.5 minutes on each side. We take them out of the water and then let them cool.



Step 2:

To make this cake we need a pan with a diameter of 26cm and a height of about 9cm. I used an enameled pan.
Caramelize the sugar in a small Teflon or stainless steel pan and then pour the caramel into the cake pan which must be warm so that the caramel can spread more easily on its surface. Note: do not try to caramelize the sugar directly in the enameled pan because the enamel will jump, you will spoil the pan due to the very high temperature at which the sugar melts.


Step 3:

Place the apples in the pan and then fill their inside (instead of the spine) with cherry jam. You may not do this if you don't like it or you don't have cherry jam or you can put bitter cherries in the jam or even lightly fried walnuts.


Separate the egg whites from the yolks. Mix the yolks with cold water then add the sugar and mix until it melts.

At the end, lightly incorporate the freshly sifted flour so as not to become lumpy in the composition.



Step 5:

Prepare the syrup. Boil the water and sugar together for about 1-2 minutes and after it cools, add the rum essence.

Step 6:

After the cake has cooled, pour the cold syrup on top, peel off the edges of the cake lightly with a knife, place the plate on which we place the cake and turn the pan upside down so that the top with the top will become the base of the cake and apples will be on top.

We then decorate the cake with whipped cream and various ornaments that we like.
