Cake with vanilla pudding and candied fruit
Rock: Whisk the egg whites with a pinch of salt. Add the sugar and mix until they become glossy, then add the yolks rubbed with oil, and finally the flour mixed with cocoa and baking powder. Homogenize with a spatula from bottom to top and place in a greased tray with a diameter of 16 cm. Bake in the preheated oven for 40 minutes. Remove the worktop and leave it to cool.
Cream: 300 ml milk with sugar, candied fruits cut into pieces and vanilla are boiled, the starch is dissolved with the remaining milk, when it boils, the starch is poured, stirring continuously. We make the cream when the countertop is cold.
Glaze: 150 ml of juice and sugar are boiled, the starch is dissolved with the remaining juice. When it boils, pour the starch and stir continuously. Let cool slightly.
The top is cut into 4 (3 cuts). In the tray where I baked the top, put a part of the top, then the cream and so on until we finish. Put the cake in the fridge. Remove the cake from the mold and glaze it, garnish with white chocolate.
